Ketchup casero con chipotle / Home made ketchup with chipotle


Hay que aprovechar este momento del año en el que se llenan los mercados y los huertos de tomates jugosos y sabrosos. Muchas veces cuando tenemos excedentes los preparamos en ensalada, pisto, asados... o alguna salsa de tomate.

We have to enjoy this moment of the year into the fullest because the markets and the tomato plantations are full of juicy and tasty tomatoes. Often when we have any leftovers, we can use them to prepare salads, roast or fry them ... or to create a tomato sauce with. 

En este caso, he preparado una salsa tipo ketchup con un poco de chile chipotle, para aportar un toque picante a mis platos. Si te gusta el picante, estoy convencida que esta salsa será de esas que no puede faltar en tu nevera.

In this case, I prepared a ketchup sauce: with a little bit of chipotle, to add a spicy touch to my dishes. If you like spicy food, you will love this sauce. It will be a must in your fridge.

Ingredientes:

800g de tomates frescos o 1 lata de tomates enteros al natural
2 cucharada sopera de azúcar (preferible moreno)
1 cucharada pequeña de canela
1 cucharada pequeña de sal
1/2 cebolla mediana
2 cucharadas soperas de vinagre
4 cucharadas soperas de aceite de oliva
1 ajo mediano
un puñadito (aprox. 16) de pimienta negra en grano
1 clavo entero
1 ramita de apio
1 trozo pequeño de jengibre
1 hoja de laurel
1 chile chipotle de lata

Ingredients:
800g of fresh tomatoes or 1 can of peeled tomatoes
2 soup spoons of sugar (preferably brown sugar)
1 teaspoon of cinnamon
1 teaspoon of salt
a half of an onion (medium sized)
2 soup spoons of vinegar
4 soup spoons of olive oil
1 garlic (medium sized)
a bit of black peppercorns (about 16)
1 clove
1 small piece of celery
1 small piece of ginger
1 leaf of laurel
1 chipotle chili

Preparación:
1. Si usamos tomates frescos primero los vamos a escaldar en agua hirviendo para pelarlos más fácilmente. A continuación, los vamos a triturar con la batidora.
2. Picar la cebolla, cocerla en la sartén con el aceite hasta que esté bien acitronada. Añadir el ajo, el chile y el tomate. Dejar cocer un momento a fuego medio.
3. Añadir el resto de los ingredientes y dejar cocer a fuego medio tapado, dejando que se escape un poco el vapor, hasta que reduzca y tome consistencia.
4. Pasar por la batidora, tamizar la mezcla y regresarla de nuevo a la sartén para dejar reducir un poco más a fuego lento.
5. Dejar enfriar y guardar la salsa en un bote. Se puede guardar en refrigeración o bien a temperatura ambiente siempre que se haya esterilizado el recipiente y se haga el vacío.

Preparation:
1. If you want to use fresh tomatoes, you need to peel them first. To ease the peeling process, put the tomatoes some minutes in boiling water. Then, smash them in the mixer.
2. Cut the onion. Cook it in the saucepan with the olive oil until it looks clear. Add the garlic, the chile and the tomatoes. Let it cook for a little while at medium heat.
3. Add the other ingredients and let it cook -covered-at medium heat. Move the lid a little bit to make the steam come out easier, until the sauce gets more consistent.
4. Put it in the mixer and sieve it. Put it to the saucepan again and cook it at slow heat.
5. Put it in tins to let it cool. Once cooled, you can keep it in the refrigerator. If you want to keep the sauce in your pantry, you need to sterilize the tins (vacuum).

    Que rico!!! tomo nota de la receta, pero no pondré el chile, a los niños no les va a gustar, el picante de momento no es su fuerte. Gracias, porqué un ketchup nos va de perlas, para substituir los comerciales.
