Inspírate con garbanzos - Inspiration day with chickpeas



Contamos con la presencia Alba, una querida compañera que ha compartido varias de sus recetas en Cocina Global.  Mi vida con un vegano es el blog que empezó cuando decidió cambiar su alimentación.  Más tarde este blog evolucionó en la web paraveganos. 

Our guest is Alba, our beloved friend who shared several of her recipes in Cocina Global.  She started her blog Mi vida con un vegano (My life with a vegan) when she changed her eating style.  Later on, this blog evolved into the web paraveganos (for vegans).   

Otro de sus proyectos es Veganiza el chef que ha creado junto a Noemí.  El objetivo de cada mes consiste en crear la versión vegana de una receta clásica. ¿Sabrías sustituir los ingredientes de origen animal por otros aptos para veganos? Se me ocurrió consultar a Alba para que nos diera algunas pistas sobre el ingrediente de este mes.

Another of her projects is Veganiza el chef (let´s vegan the chef), a blog she created together with Noemi.  The monthly challenge is to create a vegan version of a classical recipe.  Will you be able to substitute the ingredients which are of animal origin for other suitable for vegans?  So I decided to consult with Alba to get some ideas about the ingredient for this month.

¿Cómo podemos sustituir las proteínas animales por legumbres en nuestra dieta?

La manera de consumir proteína de calidad con las legumbres es combinarla con arroz, quinoa o pasta; porque de esta manera se consiguen todos los aminoácidos necesarios.  Aunque las proteínas vegetales las encontramos en un montón de alimentos.

How can we substitute animal proteins for vegetables in our diet?

The best way to get some quality protein with vegetables is to combine them with rice, quinoa or pasta.  This way you get all the necessary amino-acids.  Nonetheless, vegetable proteins may be obtained from a good number of foods.

A parte de guisos, estofados y el humus, cuáles son las otras formas de preparar garbanzos?

Se pueden hacer infinidad de veggieburguers. Como he dicho antes, se puede combinar con arroz y verduras y así crear un plato muy completo.  También ensaladas frías, salteados para acompañar tofu o seitán (carne de gluten).



También existe el tempeh de garbanzos. El tempeh es un fermentado de legumbres (el más habitual es el de soja), de semillas o cereales.


Otra manera, es utilizar harina de garbanzo. Es perfecta para sustituir el huevo porque es una harina muy aglutinante. Yo la utilizo mucho en rebozados. Y en contra de lo que puede parecer no tiene un sabor fuerte y no altera los demás ingredientes del plato.

También os tengo que decir que el hummus es un plato que está en todas las cocinas veganas, porque a parte de lo buenos que son los garbanzos, lleva tahini (pasta de sésamo) que es de los  alimentos con más calcio.

Apart from stews, hot pots and humus, which are the other ways of preparing chickpeas?

You can prepare many kinds of veggi-burgers.  As I said before, chickpeas can be combined with rice and other vegetables to get a very complete meal.  They can be used in nice cold salads, they can  be sautéed to garnish tofu or seitan (gluten meat).

There is also chickpeas tempeh.  Tempeh is a ferment of pulses (the most used is with soya beans), of  seeds or cereals.  

Another way of using this ingredient to prepare your dishes is using chickpea flour.  This flour is perfect for substituting eggs as it is very agglutinative.  I use it quite often in batters.  The taste of this flour is not very strong, unlike what many people may think, and it does not alter the rest of the ingredients of your dish.

I must you tell that humus - the purée made of chickpeas - is a well-known dish of vegan cooking.  Chickpeas are not only good for your health, but to prepare a humus you add tahini (a sesame paste) which is one of the ingredients with most calcium.
