Decidimos Mozzarella para este mes y quise immediatamente sumergirme en el mundo de los quesos. Aunque parezca increíble no había vuelto a preparar queso desde que tenía unos 12 años. Recuerdo bien esa vez, cuándo quise hacer un queso fresco en forma de corazón (para san valentín, oh!) y en lugar de eso salió una masa arenosa incomible...
Así que no podía dejar la cosa así, y decidí que este sería el mes descubrimiento de "Eva Linda y los quesos". Tenía el recuerdo de haber hecho ese queso "cortando" la leche con vinagre, así que no pensaba repetir esa operación. Me metí en Etsy en busca de alguna receta o kit para preparar mozzarella. Y entre todos los que vi me decidí por el de The urban cheese craft y es que era tan completo y detallado que me cautivó de buenas a primeras.
Pero como ya te digo, mi recuerdo no era nada memorable, por lo que decidí escribir primero para preguntar si era un "kit apto para novatos". Rápidamente obtuve respuesta de Claudia (un amor de chica!), que disipó mis dudas al instante.

Así fue como a los pocos días recibía uno de esos tan deseados paquetitos que me gusta encontrar sobre la mesa cuándo llego a casa :) Todo venía muy bien presentado, completo y con el más mínimo detalle.
Ahora faltaba la otra parte, conseguir leche fresca. Y aunque podéis comprarla en la zona de refrigerados de cualquier supermercado, te recomiendo que si tienes el privilegio de vivir en una zona dónde hay bastantes granjas (como es mi caso) compra esa leche porque realmente estará fresquísima.
Así que ahora si puedo decir con una gran sonrisa... prueba superada!
Y aunque me falta ir mejorando el aspecto, queda un sabor increíble que esta vez si ha causado furor en mi casa. Y tienes tu propia mozzarella en menos de una hora!
Así que ahora estoy usando esta deliciosa mozzarella en mis ensaladas, pizzas... y alguna que otra receta increíble que os voy a mostrar a finales de este mes ;) Y además sigo experimentando con el kit para obtener otros quesos. Y hasta me atrevo a usar vinagre y también limón para conseguir coagular la leche!

When we decided that we would work with mozzarella, this month, I immediately wanted to dive into the world of cheese. And maybe it seems incredible but I never tried to make my own cheese again since I did it once, at the age of 12 year. I remember well this experience, when I tried to make a heart shaped cheese (to celebrate Valentine's day, oh!) but it didn't turn out well with a sandy mass as a result. Besides, it didn't taste well either.
So, I needed to try again, and I decided that this month would be the month of the "Eva Linda and cheese" resurrection. I remember that I tried to make this cheese using vinegar to 'cut' the curd. So, I should not try to do it this way again. That's why I started to search on Etsy for recipes or kits to make your own cheese. And I liked The urban cheese craft presentation. It looks very complete and gives a lot of information. It was love at first sight.
Like I said, my first experience with making cheese wasn't a good one. That's why I decided to send an email to know for sure if it was a 'kit for beginners'. Claudia (the cutest girl!) replied soon and my fears fade away in no time.

A few days later I had a box standing on my table. How I love these moments when I receive packages:). It was incredibly: nicely presented, filled with interesting things and such an eye for detail.
The next thing I needed to do was getting the fresh milk. You can find it in the fresh departments of the supermarket but if you are lucky to live nearby some farms (like I do), buy it there, because of its real freshness.
And so, today, I can say with a big smile: mission completed, I did it!
I know, I still need to improve the product, but the taste is really incredible. My family adores it and you can make your own mozzarella in less than one hour!
So, I am using it now to make salads, pizzas ... and other incredibly delicious recipes that I will show you at the end of the month ;) Besides, I am experimenting with the cheese kit to create other cheeses. And now, I am using vinegar and lemon to clot the milk!
