Ingredientes
4 ó 5 peras firmes
500 ml vino tinto fuerte (DO Bierzo,
Toro, Ribeira Sacra...)
Corteza de naranja
Ralladura de una naranja
1 Canela en rama
150 g azúcar
200 ml nata para montar con 35% materia
grasa
Jengibre en polvo
1 cucharadita de extracto de vainilla

pears
500 ml of
strong red wine (DO Bierzo, Toro, Ribeira Sacra…)
The peel of one orange
The grated
rind of one orange
1 cinnamon
stick
150 g sugar
200 ml cream
with 35% fat
Ground ginger to taste
1 teaspoon of
vanilla extract
Preparación
Montar mientras la nata. Añadirle la ralladura de naranja, el extracto de vainilla y jengibre al gusto y mezclar despacito. Para servir, poner un buen montón de nata y los trozos de pera encima.
Preparation
Peel the pears
and quarter them. Pour the wine into a saucepan; add the orange peel, the cinnamon stick and the pear quarters. Simmer for 15 – 20
minutes until the pears get soft although the quarters should not break up. Remove from the heat and let cool.
Meanwhile, whip the
cream. Add the orange rind, the vanilla extract and the ground ginger to taste and mix gently. Put a generous heap of whipped
cream in a bowl and put the pear quarters on top to serve.
