Así que como comprenderéis, solo se cumplen sus deseos en los desayunos de fin de semana. Y aquí os traigo esta receta del que fue su desayuno este sábado pasado y que es uno de sus platillos mexicanos favoritos: Huevos Rancheros.
Y es que hay que consentir la panza, para hacer más llevadera la lejanía. La gran ventaja de este plato es que lo puedo tener listo rápido y sin necesidad de muchos ingredientes.
¡Así que toma nota!
Ingredientes (por persona):
1 ó 2 huevos
2 a 4 tortillas de maíz
una lata de frijoles refritos
queso rallado
una lata pequeña de salsa roja picante (al gusto)
totopos (para decorar)
aceite de girasol (para freír)
Preparación:
1.- Si no tienes totopos y quieres prepararlos en casa. Corta una tortilla por la mitad, y corta cada parte en 3 triángulos. En una sartén calienta un poco de aceite de girasol y fríe los triangulitos y reserva.
2.- Caliente un poco las tortillas en el comal o en el microondas. Pásalas muy rápido por el aceite caliente dónde acabas de freír los totopos. Y ponlas en un plato.
3.- Haz huevos fritos: Fríe los huevos en la sartén con el aceite caliente, hasta que la clara esté doradita por la parte de abajo. Ponlos encima de las tortillas que tienes en el plato. Si te gusta el picante, ponle un poquito de salsa roja picante encima.
4.- Abre la lata de frijoles refritos y caliéntalos un poco en el microondas o en una sartén. Sirve unos poquitos en el lateral del plato. Espolvorea con queso rallado por encima y decora con los totopos.

grated cheese
a small can of spicy red sauce (if you like spicy)
totopos (fried corn tortillas for garnish)
sunflower oil (for frying)
Preparation:
1.- If you don't have totopos and do you want to prepare it in home, cut a corn tortilla in a half, and then cut each part into 3 triangles. Heat a little sunflower oil in a pan and fried it. Then set aside.
2.- Warm the tortillas on the comal (like a griddle) or in the microwave. Pass them quickly in the warm sunflower oil and put them on the plate.
3.- Make fried eggs: Fry the eggs in the hot sunflower oil until see that the white eggs is being golden brown. Put them on top of the tortillas and put a little bite of spicy red sauce on top, if you like it.
4.- Open the can of refried beans and warm it in the microwave or in a saucepan. Serve a little bite on the side of the eggs and sprinkle on top with grated cheese. Then, put the totopos on top.
