Mejillones al roquefort / Mussels with sauce roquefort



Hace un par de semanas, hicimos una escapada a nuestro NUEVO país vecino: BELGICA. Exactamente, nos fuimos a Brujas. Bella por sus calles medievales, sus fotogénicos puentes cruzando el xxx y sus monísimas bicicletas.

Two weeks ago, we was on our NEW neighbor country: BELGIUM. Exactly, we escaped to Brugge. Beauty for their medieval street, their photogenic bridges crossing the xxx and their beautiful bicycles.

Tuvimos un día excelente, repleto de sol, algo poco habitual por estos lados. Pero que nos vino de maravilla para pasear y hacer un montón de fotos.

We spend an excellent day, with full of sun, unusual here. But, was great to walk and take a lot of photos.

En todos los restaurantes tienen su plato estrella "Mejillones con patatas fritas". Así que no os podía debía presentados una de sus múltiples versiones. Aquí tenéis los mejillones al roquefort:

In all of restaurants, you could find their best dish "Mussels with chips". So, I must to show you one of all their versions. Here, you could see Mussels with sauce roquefort:

Ingredientes:
1/2 kg de mejillones frescos
medio vaso pequeño de vino blanco
25g de mantequilla
1 c/p de harina
1/2 cebolla
1 c/s de queso roquefort
crema de leche (opcional)

Ingredients:
1/2 kg of fresh mussels
1/2 small glass of white wine
25g of butter
1 small spoon of wheat flour
1/2 onion
1 spoon of roquefort's cheese
crema (opcional)



Preparación:

1. Limpiar los mejillones. Ponerlos en un cazo con el vino blanco y cocinarlos.  
2. Quitar una de las conchas y colocar la que contiene el mejillón en un plato.
3. Derretir la mantequilla, añadir la harina y la cebolla picada muy fina.  Añadir el caldo de los mejillones.  Hervir unos 20 minutos. Añadir el queso y un poco de crema de leche.
4. Verter la salsa sobre los mejillones calientes y servir.

American-style mussels

1. Clean the mussels. Put them into a saucepan with a the white wine, and boil them.  
2. Take off one of the shells and put the one with the mussel.  
3. Melt the butter; add the flour and a the onion finely chopped.  Add the juice of the mussels.  Boil about 20 minutes.  
4. Pour the sauce on the hot mussels and serve.

Mejillones en escabeche / Pickled Mussels

Con ésta receta, seguro que dejarás de abrir latas de mejillones cuándo tengas invitados, y además quedarás como un rey.

Next that, you will not open more cans of mussels again for your guests. They worship you for that.

Here, the recipe:

Ingredients
1kg fresh mussels
1/2 small spoon of sweet paprika
3/4 glass of olive oil
1/4 glass of vinegar
2 leaves of laurel
a little bit of pepper grains
1/2 small spoon of salt
trickle of white wine (optional)

Preparation
1. Clean the mussels and cook with a little bit of water and the wine. When they are open cooked during two minutes.
2. Infuse the oil with the laurel and the peppers, over low heat during twenty minutes. Keep out of fire and added the paprika and the salt.
3. Keep of the mussels from their shells, and put it on the infused oil. When they are cool put it on the fridge for two days.

Note: we could keep it on the fridge during one week covering the mussels with oil.

Sopa de mejillones - Mussel soup


Esta es la receta que he elegido de mi libro-tesoro.  Es muy sencilla y muy sabrosa. ¡Espero que os guste!  This is the recipe I chose from my treasured recipe book.  It is very simple to prepare and very tasty.  I hope you will enjoy it!


Ingredientes

- 750 – 800 g de mejillones medianos (con las conchas)
- 1 vaso de agua
- 1 cebolla grande picada
- aceite de oliva
- 1 yema
- Sal, pimienta

Ingredients

- 750 – 800 g medium-sized mussels (with the shells)
- 1 glass of water
- 1 big chopped onion
- Olive oil
- 1 egg yolk
- Salt, pepper

Preparación

Limpiar bien los mejillones.  Ponerlos en un cazo con el vaso de agua y cocer durante 5 minutos.  Freír la cebolla picada y añadirle el agua de cocción de los mejillones colada.  Añadir agua al gusto, el aceite, sal y pimienta.  Agregar los mejillones sin las conchas y cocer durante 10 minutos.  Diluir la yema en la sopa.  Servir sobre finas rodajas de pan.

Preparation

Clean the mussels well.  Put them in a saucepan with the glass of water and cook for 5 minutes.  Fry the chopped onion and add the sieved water from cooking the mussels.  Add  as much water as you want.  Add the olive oil, salt and pepper.  Add the unshelled mussels and cook again for 10 minutes.  Dilute the egg yolk in the soup.  Serve on thin slices of bread

Inspírate con mejillones - Inspiration day with mussels


Retomamos esta sección con un tesoro que encontré oculto entre unos libros de recetas.  Es un monográfico sobre pescados y marisco del Comité Nacional de Propaganda para el consumo del pescado publicado en 1964.  Es divertido comprobar que estas publicaciones todavía existen.  El léxico actual cambiaría propaganda por promoción, pero, la intención sería idéntica: fomentar su consumo. 

We restart this section with a treasure I found hidden amongst some cookery books.  It is a book with a single subject: fish and shellfish from the French National Committee of Propaganda for the Consumption of Fish published in 1964.  It is interesting to find that these types of publications are still available nowadays.  Currently used words would exchange propaganda for promotion, but its intention would still be the same: to promote the consumption of fish and shellfish.


Hace cincuenta años en Francia, se atribuía el escaso consumo de pescado y marisco por la falta de variedad en su preparación según se lee en la introducción.  Este monográfico es una auténtica maravilla.  Hay un capítulo entero con recetas específicas para 38 tipos de pescados distintos. ¿De verdad existen tantos? 

Fifty years ago in France, it was believed that the lack of consumption of fish and shellfish was due to the lack of variety in cooking according to the introduction of this book.  This special book is marvellous.  There is a chapter with specific recipes for 38 different kinds of fish.  Are there really that many?

El ingrediente de febrero me planteaba un reto porque no conozco muchas formas de preparar mejillones. Compartiré algunas de las recetas más originales incluidas en capítulo de moluscos de esta maravilla de libro.  ¡Espero que os inspiren!

The ingredient for February is a challenge for me, as I do not know that many ways of preparing mussels.  I will share some of the most original recipes included in the chapter for molluscs included in this wonderful book.  I hope they will inspire you!


Mejillones a la americana

Limpiar los mejillones. Ponerlos en un cazo con un vaso de vino blanco y cocinarlos.  Quitar una de las cochas y colocar la que contiene el mejillón en un plato que se mantiene caliente.  Derretir 50 gramos de mantequilla, añadir 25 de harina y una cebolla grande picada muy fina.  Añadir el caldo de los mejillones.  Hervir unos 30 minutos.  Verter la salsa sobre los mejillones calientes y servir.

American-style mussels

Clean the mussels. Put them into a saucepan with a glass of white wine, and boil them.  Take off one of the shells and put the one with the mussel in a dish to be kept hot.  Melt 50 grams of butter; add 25 grams of flour and a big onion finely chopped.  Add the juice of the mussels.  Boil for 30 minutes.  Pour the sauce on the hot mussels and serve.   

Mejillones a la borgoñona

Limpiar y hacer abrir los mejillones en un cazo sin agua.  Quitar una de las conchas.  Preparar 125 gramos de mantequilla con ajo, perejil y un clavo. Colocar una cantidad equivalente a un guisante de esta preparación en cada mejillón.  Colocarlos en una fuente y hornear unos 5 minutos.  Servir caliente.

Burgundy-style Mussels

Clean the mussels and let them open in a saucepan without water.  Take off one of the shells.  Mix 125 grams of butter with garlic, parsley and one clove.  Put a pea-size amount of this preparation on each mussel.  Put them on a tray and bake for 5 minutes.  Serve hot.


Mejillones al vino de Madeira

Limpiar y hacer abrir los mejillones en cazo sin agua.  Quitar una de las conchas y colocar sobre un plato la otra que contiene el mejillón.  Calentar mantequilla en un cazo, un tomate triturado, el agua que han soltado los mejillones y una copa de vino de Madeira.  Reducir y servir sobre los mejillones.

Mussels with Madeira wine

Put the clean mussels in a saucepan without water and heat them until they open.  Take off one of the shells and put the other with the mussel in a dish.  Heat some butter in a saucepan with a crushed tomato, the water the mussels left and a glass of Madeira wine.  Reduce and serve on top of the mussels.

Mejillones a la marinera

Preparar un caldo con tomillo, cebolla, zanahorias y sal.  Dejar entibiar.  Cuando los mejillones se han abierto en un cazo, verter el caldo sobre ellos. Mantener caliente sin que llegue a hervir.  Servir.

Fisherman-style mussels

Prepare a stock with thyme, onions, carrots and salt.  Let cool. Put the mussels in a saucepan.  When they open, pour the stock on them.  Keep hot without boiling.  Serve.

Mejillones / Mussels


Os pedimos disculpas por presentar el ingrediente de este mes con unos días de retraso. Pero estos últimos meses han sido repletos de varios cambios, imprevistos y nuevos proyectos. Lo que nos ha impedido también publicar la revista de Navidad. Pero prometemos tenerla a punto pronto.

Our apologize for presenting the ingredient with a few days of delay. Last months have been filled with several changes, unexpected and new projects. What has also kept us from publishing the Christmas magazine. But we promise: it will be ready soon.

Tres de las chefs hemos estado de traslado, y casualidades de la vida, dos de nosotras hemos cruzado fronteras para irnos a vivir al mismo país: Francia. Aunque a varios km de distancia, una en el norte y otra en el sur, aprovecharemos esta oportunidad para dar a conocer este culinario país.

Three of us (the chefs) have been occupied, because we moved and are moving to another place. Two of us have crossed/are crossing borders to go and live in the same country: France. Although several miles away from each other, one in the north and one in the south. This will be the opportunity to present this culinary country.

A Cristina y familia, les mando un abrazo enorme y mucha energía, para que se recuperen pronto, ya que han estado "pachuchillos" durante varias semanas. A pesar de todo, ha sido el "motorcillo" de este blog, quién ha estado todos estos meses dando la cara, el cuerpo y el alma por todas nosotras.

I send a big hug to Cristina and her family and lots of energy to recover soon: they have been ill for several weeks. Nevertheless, Cristina was the 'little catalyst' of this blog, dedicating blood, sweat and tears, to keep it alive during all these last months.

Bueno, a lo que iba, este mes nos vamos a acercar al mar, para traer uno de sus más suculentos y sabrosos frutos, los MEJILLONES! Además de su agradable textura y su exquisito sabor, nos encantan en este blog por ser uno de esos ingredientes de temporada asequibles.

This month, we will bring the sea to the table, to bring one of its most succulent and tasty fruits, MUSSELS! Besides its pleasant texture and its exquisite flavor, we love this ingredient because it is one of those affordable, seasonal ingredients.

El mejillón es un molusco, de cultivo extensivo de siembra en cuerdas suspendidas en el agua. El mayor crecimiento es en invierno, de octubre a marzo. Por su alto contenido en proteínas y su bajo contenido en grasa es un alimento ideal para todas las edades, y en dietas de control del peso.

The mussel is a shellfish, product from extensive seed culture, growing on ropes, suspended in the water. The biggest growth is in winter, from October to March. Because of its high protein and low fat conten, it is ideal for all ages, and especially suitable for weight control diets.
