Manzanas al horno con clavo y canela / Baked apples with cloves & cinnamon


Hay recetas que nunca fallan, que deben ser pasadas de generación en generación, de año en año, de vida en vida. Para que el sabor perdure para la eternidad. Ese es para mí, el sabor de una manzana recién horneada. 

There are some recipes that never fail. They have been passed on from generation to generation, each year again, life to life. Because it is important that their flavour lasts for eternity. For me, this is the case with baked apples.

Pienso en ello y no puedo evitar recordar cuándo de pequeña saltaba a casa de mi vecina, para oler ese dulce olor a manzana al horno. Veía a través del cristal como su piel tersa se iba arrugando lentamente mientras emanaba un delicioso jarabe dulzón. Obviamente, mi vecina conocía bien mi afición a sus manzanas y me decía: "He puesto alguna más en el horno para que ti" :) Así que yo esperaba pacientemente (bueno, ese es un decir) que saliera MI jugosa manzana.

Baked apples: thinking of them reminds me of my childhood. When I jumped to my neighbour's home to smell the sweetness of baked apples in the oven. I was looking through the window of the oven how their smooth skin was wrinkling slowly and how a delicious sweet syrup was emanating. Obviously, my neighbour knew my love for the baked apples. So, she said to me: "I'll put one more in the oven for you" :) Then, I was waiting there in calm (well, sometimes) until MY juicy apple was ready.

Ingredientes
Manzanas
Azúcar
Clavo
Canela en polvo
Vino dulce (opcional)

Ingredients
Apples
Sugar
Cloves
Cinnamon powder
Sweet wine (optional)

Preparación
1. Limpiar bien las manzanas
2. Colocarlas en una bandeja para el horno, prefiriblemente sin que queda mucho espacio libre, sino que queden bien juntas.
3. Con un cuchillo hacer una insición en la parte superior hacía el centro de la manzana. Colocar un clavo en cada incisión. Y si quieres echar un chorrito de vino dulce en cada una
4. Espolvorear todas las manzanas con azúcar y un poquito de canela.
5. Cocer en el horno a 170ºC hasta que estén bien cocidas 

Preparation
1. Clean the apples
2. Put them on an oven tray, preferably without any space between them
3. Make a little incision with a knife in the bottom of the apple. Put one clove in every apple. And if you'd want, you can add a little bit of sweet wine too
4. Sprinkle with a little bit of sugar and a bit of cinnamon
5. Bake them in the oven, at about 170ºC until they are ready

Frutos rojos con crema de arroz con leche / Red berries with rice pudding cream


Esta es una versión muy original del arroz con leche que encontré aquí.  Esta receta mezcla la oposición de sabores ácido y dulce con el contraste de texturas de las galletas, del arroz y de los frutos rojos. 

This is a very original version of rice pudding I found here.  This recipe mixes the opposition bitter sweet with the contrast of textures from biscuits, rice and red berries.
Ingredientes (2 personas)

50 g de arroz bomba
75 g de azúcar moreno
500 ml de leche
8 galletas tipo maría
6 nueces
2 trozos de cáscara de limón
300 g frutos rojos: arándanos, frambuesas, fresas y moras
1 nuez de mantequilla
1 chorrito de vinagre de frambuesa
1 ramita de canela
4 bolas de pimienta roja o negra
hojas de menta

Ingredients (2 servings)

50 g round grain rice
75 g brown sugar
500 ml full cream milk
8 crunchy biscuits
6 walnuts
2 pieces of the lemon peels (without the white part)
300 g red berries: blueberries, raspberries, strawberries and blackberries
1 knob of butter
1 drop of raspberry vinegar
1 cinnamon stick
4 grains of black or red pepper
fresh mint leaves

Preparación:

Calienta la leche en una cazuela con la rama de canela y los trozos de cáscara de limón. Cuando esté a punto de hervir, introducir el arroz y cocinar durante 15 minutos aproximadamente. Añadir el azúcar moreno y cocinar durante 10 minutos más. Dejar que se enfríe y triturar hasta conseguir una crema fina.  

Romper las galletas en un bol y reservarlas. Trocear las fresas en un bol. Añadir unas hojas de menta picadas y agregar las bolas de pimienta machacadas. Mezclar bien y saltear todo en una sartén con la mantequilla. Incorpora los arándanos, las frambuesas y las moras. Verter un chorrito de vinagre de frambuesa y saltear brevemente el conjunto. Repartir el salteado de frutos rojos en 2 vasos. Colocar encima un puñadito de galletas.  Rellenar el vaso con la crema de arroz. Poner encima unas nueces y decorar con menta.

Preparation

Heat the milk in a saucepan with the cinnamon sticks and the pieces of lemon peels.  When it starts to boil, add the rice and cook for 15 minutes approximately.  Add the brown sugar and let cook for another 10 minutes. Let it cool and blend to obtain a smooth cream.

Break the biscuits and keep them in a bowl.  Halve the strawberries in another bowl; add the chopped mint leaves and the ground pepper.  Mix well and sauté in saucepan with the knob of butter.  Add the blackberries, the blueberries and the raspberries.  Pour a small drop of raspberry vinegar and sauté briefly.  Share the berry sauté in two glasses.  Top with a handful of broken biscuits.  Fill the glass with the rice pudding cream.  Top with the coarsely ground walnuts and decorate with mint leaves.

Arroz con leche / Rice pudding

Este maravilloso postre es tan apreciado por ese toque especial que solo una abuela o una mamá pueden darle.  Altea de Las Cosas del Solete nos manda su receta llena de especias.

Ingredientes

 - 1 litro de leche
 - 150 gramos de arroz
 - 3 cucharadas soperas colmadas de azúcar
 - la corteza de un limón (sólo lo amarillo, sin la parte blanca)
 - la corteza de una naranja (sólo lo naranja, sin la parte blanca)
 - una cucharadita de café de agua de azahar
 - una cucharadita de café de esencia de vainilla
 - un palo de canela
 - un chorrito de orujo de limón (o limoncello)
 - canela en polvo y azúcar moreno para decorar

Ingredients

- 1 litre of milk
- 150 g of rice
- 3 spoonfuls of sugar
- the peel of a lemon (only the yellow part, without the white)
- the peel of an orange (only the orange part, without the white)
- 1 teaspoon of orange flower water
- 1 teaspoon of vanilla essence
- 1 cinnamon stick
- 1 drop of lemon liqueur (or limoncello)
- brown sugar and ground cinnamon for decorating

Preparación


Poner en una olla la leche con el arroz, las cortezas de limón y naranja, y el palo de canela partido por la mitad. Dejar cocer a fuego muy suave durante 1 hora aproximadamente.  Pasado ese tiempo, añadir el azúcar, el azahar, la vainilla y el chorrito de orujo. Dejamos cocer unos 15 ó 20 minutos más.

Retirar del fuego la olla y verter en una fuente. Espolvorear por encima la canela en polvo con el azúcar moreno y gratinar en el horno hasta que se forme una capa finita de caramelo. 
Dejar enfriar y ¡a comer!


Preparation


Put the milk, rice, the peels of lemon and orange as well as the cinnamon stick cut in half in a saucepan.  Cook for one hour approximately over very low heat.  Add the sugar, the orange flower water, vanilla and the drop of lemon liqueur.  Cook for 15 to 20 minutes.



Remove from the fire and pour in a container.  Sprinkle the ground cinnamon and the brown sugar on top.  Put it in the oven to gratin until getting a thin layer of caramel.  Let it cool and serve!
