Pastel de manzana con mascarpone /Apple and mascarpone cake

Ingredientes (8 personas) 


Para la masa
70 g de mantequilla blanda
110 g de azúcar glas
La ralladura de un limón
1 huevo
90 g de harina leudante
50 g de harina
175 g de leche
150 g de mascarpone
(En lugar de harina leudante, usó harina normal con media cucharita de levadura)

Para el relleno de mascarpone
350 g de mascarpone
40 g de azúcar glas
Medio huevo batido ligeramente
La ralladura de 1 limón


Para la cobertura de manzana

1 a 2 manzanas pequeñas, en rodajas horizontales

El zumo de medio limón
Mantequilla derritida para dar pinceladas
Azúcar glass para esparcir


Ingredients (serves 8 people) 

For dough
70 g  softened butter
110 g (½ cup) raw caster sugar
finely grated rind of 1 lemon
1 egg
90 g self-raising flour 
50 g (1/3 cup) plain flour

175 ml milk
150 g mascarpone
(Instead of self raising flour she used all purpose flour and ½ teaspoon baking powder)

For Mascarpone filling
350 gm mascarpone
40 gm raw caster sugar
½ egg, lightly beaten
Finely grated rind of 1 lemon

For Apple topping
1-2 small apples, thinly sliced in widthways
Juice of ½ lemon
For brushing: melted butter
For scattering: demerara sugar


Preparación



1. Precalentar el horno a 170 º C.  Mezclar la mantequilla, el azúcar glas y la ralladura de limón en una batidora hasta conseguir una mezcla pálida y esponjosa (2 a 3 minutos).  Raspar las paredes de la batidora hacia abajo para añadir y batir un huevo.  Tamizar la harina encima y mezclar, añadir la leche y el mascarpone.  Verter en un molde de 23 cm de diámetro engrasado, con papel vegetal y harina espolvoreada.  Aplanar la masa.
2. Para el relleno de mascarpone, batir los ingredientes en un recipiente hasta conseguir una consistencia lisa.  Añadir con una cuchara por encima de la masa del pastel y allanar la parte superior.
3. Para la cobertura de manzanas, colocar las rodajas de manzana en el zumo de limón.  Aderezarlas sobre el relleno de mascarpone sobreponiéndolas un poco.  Añadir encima la mantequilla derretida con una brocha, esparcir encima el azúcar moreno.  Hornear entre 50 a 60 minutos.  Espolvorear con azúcar glas encima cuando el pastel esté frío. 

Preparation

1. Preheat oven to 170C. Beat butter, caster sugar and lemon rind in an electric mixer until pale and fluffy (2-3 minutes), scrape down sides of bowl and beat in egg. Sift in flours, fold to combine, stir in milk and mascarpone, spoon into a 23cm-diameter springform tin (with baking papper inside), buttered and dusted with flour, smooth top.
2. For mascarpone filling, whisk ingredients in a bowl until smooth, then spoon over cake batter and smooth top.
3. For apple topping, toss apple slices in lemon juice and arrange, overlapping slightly, on top of mascarpone mix. Brush with melted butter, scatter with demerara sugar, bake until golden and risen about 50 minutes-1hour. When cake is cool dust with icing sugar.

Manzanas al horno con clavo y canela / Baked apples with cloves & cinnamon


Hay recetas que nunca fallan, que deben ser pasadas de generación en generación, de año en año, de vida en vida. Para que el sabor perdure para la eternidad. Ese es para mí, el sabor de una manzana recién horneada. 

There are some recipes that never fail. They have been passed on from generation to generation, each year again, life to life. Because it is important that their flavour lasts for eternity. For me, this is the case with baked apples.

Pienso en ello y no puedo evitar recordar cuándo de pequeña saltaba a casa de mi vecina, para oler ese dulce olor a manzana al horno. Veía a través del cristal como su piel tersa se iba arrugando lentamente mientras emanaba un delicioso jarabe dulzón. Obviamente, mi vecina conocía bien mi afición a sus manzanas y me decía: "He puesto alguna más en el horno para que ti" :) Así que yo esperaba pacientemente (bueno, ese es un decir) que saliera MI jugosa manzana.

Baked apples: thinking of them reminds me of my childhood. When I jumped to my neighbour's home to smell the sweetness of baked apples in the oven. I was looking through the window of the oven how their smooth skin was wrinkling slowly and how a delicious sweet syrup was emanating. Obviously, my neighbour knew my love for the baked apples. So, she said to me: "I'll put one more in the oven for you" :) Then, I was waiting there in calm (well, sometimes) until MY juicy apple was ready.

Ingredientes
Manzanas
Azúcar
Clavo
Canela en polvo
Vino dulce (opcional)

Ingredients
Apples
Sugar
Cloves
Cinnamon powder
Sweet wine (optional)

Preparación
1. Limpiar bien las manzanas
2. Colocarlas en una bandeja para el horno, prefiriblemente sin que queda mucho espacio libre, sino que queden bien juntas.
3. Con un cuchillo hacer una insición en la parte superior hacía el centro de la manzana. Colocar un clavo en cada incisión. Y si quieres echar un chorrito de vino dulce en cada una
4. Espolvorear todas las manzanas con azúcar y un poquito de canela.
5. Cocer en el horno a 170ºC hasta que estén bien cocidas 

Preparation
1. Clean the apples
2. Put them on an oven tray, preferably without any space between them
3. Make a little incision with a knife in the bottom of the apple. Put one clove in every apple. And if you'd want, you can add a little bit of sweet wine too
4. Sprinkle with a little bit of sugar and a bit of cinnamon
5. Bake them in the oven, at about 170ºC until they are ready

Inspírate con manzanas / Inspiration day with apples



Amarillas, anaranjadas, rosadas, rojas y verdes estos son los colores de las manzanas que se encuentran en tiendas y mercados.  Esta fruta cuenta con múltiples variedades.  Golden Smoothee, Golden Supreme, Gloster 69, Granny Smith, Idared, Jonagold, McIntosh, Red Chief, Red Delicious, Royal Gala, Starking, Summerred, Topred Delicious y Reineta Gris son las más conocidas.  

Yellow, orange, pink, red and green: these are the colours of the apples that can be found in shops and markets.  There is a great number of varieties.  The most famous are:  Golden Smoothee, Golden Supreme, Gloster 69, Granny Smith, Idared, Jonagold, McIntosh, Red Chief, Red Delicious, Royal Gala, Starking, Summerred, Topred Delicious and Pippin.

Cada variedad se distingue por el color, el sabor dulce o ácido y la textura de su carne.  Estas características hacen que algunas manzanas sean idóneas para una determinada preparación: en crudo o cocinada.  Suele consumirse como postre, en repostería y en zumo. 

According to the variety, apples differ in colour, flavour (acid or sweet) as well as in the texture of their flesh. The features of some apples make them suitable for a specific preparation: raw or cooked. The apples are usually consumed as a dessert, in cakes or in apple juice. 

Ya sean asadas o en compota, las manzanas acompañan algunas carnes como guarnición .  Se añaden crudas o liofilizadas en ensaladas.  Desde hace algún tiempo este ingrediente también aparece en platos como las sopas.  En estos enlaces encontré unas originales sopas.  La primera es un aversión de una vichyssoise donde las patatas han sido sustituidas por manzanas.  La segunda es una sopa de calabaza, castañas y manzanas.  Espero que este ingrediente os inspire muchas recetas.

Roasted or preserved, apples can be served as garnish for some types of meat.  They can be included raw o dried in salads.  For some time, this ingredient has also appeared in recipes such as soups.  There is an original version of a vichyssoise (cream of leaks) in this link where potatoes are replaced by apples. I also found a soup with  butternut squash, chestnuts and apples.  I hope this ingredient will inspire you to create many recipes.
