Milhojas de manzana y boletus / Apple and boletus mushroom layers

Ingredientes

Manzanas reineta
Boletus
Sal y pimienta

Ingredients


Eating apples (preferably Cox´s Orange Pippins or similar)
Boletus mushrooms 
Salt and pepper
Extra virgin olive oil 

Preparación

1.- Pelamos las manzanas y le quitamos las pepitas con un descorazonador.
2.- La cortamos en rodajitas de medio centímetros de grosor aproximadamente.
3.- Asamos las manzanas en una sartén hasta que queden doraditas.
4.- Cortamos los boletus en cuadraditos, y los asamos en otra sartén con unas gotitas de aceite, sal y pimienta.
5.- Montamos las milhojas poniendo una rodaja de manzana, rellenamos con los boletus y cubrimos con otra rodaja de manzana.


Preparation

1. Peel the apples and take out the pips.
2. Slice apples approximately one centimetre or half an inch thick.
3. Fry the apple slices in oil in a frying pan until browned. 
4. Dice the mushrooms and fry in oil until browned. 
5. In a shallow dish, put the slice of apple, then mushrooms and top with more apples.

Manzanas al horno con clavo y canela / Baked apples with cloves & cinnamon


Hay recetas que nunca fallan, que deben ser pasadas de generación en generación, de año en año, de vida en vida. Para que el sabor perdure para la eternidad. Ese es para mí, el sabor de una manzana recién horneada. 

There are some recipes that never fail. They have been passed on from generation to generation, each year again, life to life. Because it is important that their flavour lasts for eternity. For me, this is the case with baked apples.

Pienso en ello y no puedo evitar recordar cuándo de pequeña saltaba a casa de mi vecina, para oler ese dulce olor a manzana al horno. Veía a través del cristal como su piel tersa se iba arrugando lentamente mientras emanaba un delicioso jarabe dulzón. Obviamente, mi vecina conocía bien mi afición a sus manzanas y me decía: "He puesto alguna más en el horno para que ti" :) Así que yo esperaba pacientemente (bueno, ese es un decir) que saliera MI jugosa manzana.

Baked apples: thinking of them reminds me of my childhood. When I jumped to my neighbour's home to smell the sweetness of baked apples in the oven. I was looking through the window of the oven how their smooth skin was wrinkling slowly and how a delicious sweet syrup was emanating. Obviously, my neighbour knew my love for the baked apples. So, she said to me: "I'll put one more in the oven for you" :) Then, I was waiting there in calm (well, sometimes) until MY juicy apple was ready.

Ingredientes
Manzanas
Azúcar
Clavo
Canela en polvo
Vino dulce (opcional)

Ingredients
Apples
Sugar
Cloves
Cinnamon powder
Sweet wine (optional)

Preparación
1. Limpiar bien las manzanas
2. Colocarlas en una bandeja para el horno, prefiriblemente sin que queda mucho espacio libre, sino que queden bien juntas.
3. Con un cuchillo hacer una insición en la parte superior hacía el centro de la manzana. Colocar un clavo en cada incisión. Y si quieres echar un chorrito de vino dulce en cada una
4. Espolvorear todas las manzanas con azúcar y un poquito de canela.
5. Cocer en el horno a 170ºC hasta que estén bien cocidas 

Preparation
1. Clean the apples
2. Put them on an oven tray, preferably without any space between them
3. Make a little incision with a knife in the bottom of the apple. Put one clove in every apple. And if you'd want, you can add a little bit of sweet wine too
4. Sprinkle with a little bit of sugar and a bit of cinnamon
5. Bake them in the oven, at about 170ºC until they are ready

Galette de manzanas / Apple tart


Paula nos trae esta estupenda propuesta.  Este enlace os lleva a la galette de manzana que publica en su blog I love bugs.   Nos encantan estas recetas sencillas pero tan apreciadas.

Ingredients

200 g flour
15 g icing sugar
1 pinch of salt
100 g cold butter
1 middle-sized egg
70 g sugar
20 g semolina flour
750 g flour
Baking paper

Preparation

Mix the flour, the salt and 10 g icing sugar thoroughly in a container.  Add the butter and work it with your fingers in order to get a crumbly texture.  Pour the beaten egg and knead the dough with your hands to get a smooth ball.    

Wrap the dough loosely in a film or in a frozen food bag.  Flatten it with the rolling pin to allow it to be rolled later Leave it for half an hour in the fridge, preheat the oven at 180º C.  Peel the apples, take out the core and cut into thin slices.   Mix the semolina with 25 g of sugar.  Take out the dough from the fridge and roll it with the rolling pin into a 25 cm diameter circle.  It is advisable to roll it on baking paper to avoid breaking the dough while moving it to the mould.  

After taking the tart out of the oven, sprinkle with the icing sugar to obtain a sparkly look.  Let it cool for 20 minutes and serve with whipped cream, ice cream or whatever you like best.  

Make a wide circle of around 30 cm of diameter with a plate.  Sprinkle with the semolina and sugar mixture; leave an edge of 3 to 4 cms.  The semolina will soak up the fruit juice, which will keep the tart crispy.

Manzanas / Apples

El ingrediente de noviembre es la manzana.  The apple is the ingredient for November.  



An apple a day keeps the doctor away.  El conocido refrán inglés nos invita a tomar una manzana cada día para gozar de buena salud.  Si nos fijamos en los componentes y en las propiedades terapéuticas de esta fruta, resulta que este proverbio está más que bien fundado. 

An apple a day keeps the doctor away.  This well-known British saying invites us to have an apple everyday in order to be healthy.  If we look at the components and the therapeutic properties of this fruit, this proverb proves to be well founded.

Una manzana contiene un gran cantidad de minerales: calcio, zinc, cloro, fósforo, hierro, magnesio, manganeso, potasio, selenio, sodio y yodo.  Posee una buena dosis de vitaminas: A, B1, B2, B5, B6, B9, C.  Sus principales componentes son la pectina, los aminoácidos, ácidos, azúcares (fructosa, glucosa, sacarosa), fibras, etc.

One apple contains a large amount of minerals: calcium, zinc, chlorine, phosphorus, iron, magnesium, manganese, potassium, selenium, and iodine.  It has a good dose of vitamins: A, B1, B2, B5, B6, B9, C.  Its main components are pectin, amino acids, sugars (fructose, glucose, sucrose), fibre, etc.

Un especialista en nutrición nos nombraría muchas de sus propiedades. Según su preparación puede resultar ser un antiinflamatorio del aparato digestivo.  La manzana favorece las eliminación de líquidos corporales y toxinas.  Es un estupendo anticatarral, ayuda a controlar el colesterol y a rebajar la presión sanguínea. Algunos sus componentes químicos convierten esta fruta en un buen anticancerígeno. 

Any nutrition specialist  would list many properties.  According to the way it is prepared, an apple can be an anti-inflammatory for the digestive apparatus.  It helps to drain body liquids and toxins.  It prevents flu; it can help to control cholesterol and to lower blood pressure.  Some of its chemical components make this fruit a good anti-cancer agent.
