Lentejas con zanahorias


Nos encantan éstas recetas rápidas, sanas y que se preparan de forma simple. Por supuesto, sin olvidar el sabor.

Este mes Las Cosas del Solete nos comparte una de las suyas:

Ingredientes:

300 gr de lentejas
1 puerro
6-8 zanahorias (según tamaño)
2 hojas de laurel
Un chorrito de vino tinto
Pimentón


Preparación:

Se pone agua fría en una olla y se añaden las lentejas. Se incorporan el puerro troceado, las zanahorias en rodajitas, el laurel, el pimentón, el vino tinto y un poquito de aceite y sal. Se pone a cocer... y listo!

Peras al vino con un toque navideño / Christmas pears in wine

Nos encanta la imaginación de Altea que se refleja tanto en sus platos como en el nombre de sus recetas tan creativas.  ¡Comprobad sino esta receta!

Ingredientes

4 ó 5 peras firmes
500 ml vino tinto fuerte (DO Bierzo, Toro, Ribeira Sacra...)
Corteza de naranja
Ralladura de una naranja
1 Canela en rama
150 g azúcar
200 ml nata para montar con 35% materia grasa
Jengibre en polvo
1 cucharadita de extracto de vainilla

Ingredients

4 to 5 firm pears
500 ml of strong red wine (DO Bierzo, Toro, Ribeira Sacra…)
The peel of one orange
The grated rind of one orange
1 cinnamon stick
150 g sugar
200 ml cream with 35% fat
Ground ginger to taste
1 teaspoon of vanilla extract

Preparación


Pelar las peras y trocearlas en cuartos. En una olla, poner el vino con la corteza de naranja, la canela, el azúcar y las peras troceadas.  Dejar cocer a fuego suave unos 15 - 20 minutos hasta que las peras estén tiernas pero no se deben deshacer. Retirar del fuego y dejar enfriar. 
Montar mientras la nata.  Añadirle la ralladura de naranja, el extracto de vainilla y jengibre al gusto y mezclar despacito.  Para servir, poner un buen montón de nata y los trozos de pera encima.


Preparation

Peel the pears and quarter them.  Pour the wine into a saucepan; add the orange peel, the cinnamon stick and the pear quarters.  Simmer for 15 – 20 minutes until the pears get soft although the quarters should not break up.  Remove from the heat and let cool.

Meanwhile, whip the cream.  Add the orange rind, the vanilla extract and the ground ginger to taste and mix gently.  Put a generous heap of whipped cream in a bowl and put the pear  quarters on top to serve.

Musaka / Moussaka

Altea nos manda una versión muy interesante de la musaka griega con ingredientes distintos a los de la receta original.  Gracias Altea por compartir tus creaciones imaginativas.

Ingredientes

Berenjenas
Tomates
Requesón
Jamón de pavo
Orégano
Sal y pimienta

Ingredients

Aubergines
Tomatoes
Cottage cheese
Turkey 
Oregano
Salt and pepper

Preparación

Cortar las berenjenas en láminas finitas.  Hacer lo mismo con el tomate y el jamón de pavo.  En el recipiente donde vayamos a cocinar la musaka, cubrir el fondo con una capa de láminas de berenjenas. Añadir el requesón a capa de berenjenas, el tomate en rodajas y el jamón. Salar y pimentar y echar un poco de orégano. Tapar con otra capa de berenjenas, y repetimos el proceso con tantas capas como queramos.  Meter en el horno y dejar cocinar durante 30 - 40 minutos a unos 200º C.

Preparation

Cut the aubergines into thin slices.  Cut the tomatoes and the turkey into thin slices. Cover the bottom of a container with a layer of aubergine slices.  Add the cottage cheese on top of the aubergine slices, the slices of tomatoes and turkey ham. Add salt and pepper and a pinch of oregano.  Put another layer of aubergine slices, repeat these steps, as many times as you like.   Cook in the oven at 200º C for 30 to 40 minutes.

Arroz con leche / Rice pudding

Este maravilloso postre es tan apreciado por ese toque especial que solo una abuela o una mamá pueden darle.  Altea de Las Cosas del Solete nos manda su receta llena de especias.

This marvelous dessert is so loved because of this special touch only a mum or a granny can add.  Altea from Las Cosas del Solete is sharing her spicy recipe with us.


Ingredientes

 - 1 litro de leche
 - 150 gramos de arroz
 - 3 cucharadas soperas colmadas de azúcar
 - la corteza de un limón (sólo lo amarillo, sin la parte blanca)
 - la corteza de una naranja (sólo lo naranja, sin la parte blanca)
 - una cucharadita de café de agua de azahar
 - una cucharadita de café de esencia de vainilla
 - un palo de canela
 - un chorrito de orujo de limón (o limoncello)
 - canela en polvo y azúcar moreno para decorar

Ingredients

- 1 litre of milk
- 150 g of rice
- 3 spoonfuls of sugar
- the peel of a lemon (only the yellow part, without the white)
- the peel of an orange (only the orange part, without the white)
- 1 teaspoon of orange flower water
- 1 teaspoon of vanilla essence
- 1 cinnamon stick
- 1 drop of lemon liqueur (or limoncello)
- brown sugar and ground cinnamon for decorating

Preparación


Poner en una olla la leche con el arroz, las cortezas de limón y naranja, y el palo de canela partido por la mitad. Dejar cocer a fuego muy suave durante 1 hora aproximadamente.  Pasado ese tiempo, añadir el azúcar, el azahar, la vainilla y el chorrito de orujo. Dejamos cocer unos 15 ó 20 minutos más.

Retirar del fuego la olla y verter en una fuente. Espolvorear por encima la canela en polvo con el azúcar moreno y gratinar en el horno hasta que se forme una capa finita de caramelo. 
Dejar enfriar y ¡a comer!


Preparation


Put the milk, rice, the peels of lemon and orange as well as the cinnamon stick cut in half in a saucepan.  Cook for one hour approximately over very low heat.  Add the sugar, the orange flower water, vanilla and the drop of lemon liqueur.  Cook for 15 to 20 minutes.



Remove from the fire and pour in a container.  Sprinkle the ground cinnamon and the brown sugar on top.  Put it in the oven to gratin until getting a thin layer of caramel.  Let it cool and serve!

Tomates rellenos de cuscus / Couscous stuffed tomatoes





Tras darle algunas vueltas, Altea de Las Cosas del Solete decidió versionar la receta de tomates rellenos.  Este es el delicioso resultado, ¡gracias por compartirla!

After thinking a while, Altea from Las Cosas del Solete decided to adapt the stuffed tomatoes recipe.  This is the delicious result. Thanks a lot for sharing it!



Ingredientes

5 ó 6 tomates (en función del tamaño)
200 g de couscous
Caldo de pollo
100 g de pistachos pelados
150 g de queso feta
1 diente de ajo
Hierbabuena fresca 

Ingredients

5 or 6 tomatoes (according to size)
200 g couscous
Chicken stock
100 g pistachio
150 g feta cheese
1 clove of garlic
Fresh mint



Preparación

Cortamos la parte superior de los tomates, y vaciamos el interior en un bol.  Preparamos el cucús: la misma cantidad de caldo de pollo que el volumen del cuscús. Cuando esté hirviendo, lo retiramos del fuego y lo vertemos sobre el cuscús. Lo tapamos y lo dejamos reposar unos 10 minutos (hasta que absorba todo el agua). 

Una vez que el cuscús esté listo, sofreímos la pulpa que habíamos vaciado de los tomates. Picamos los pistachos con el diente de ajo, y lo añadimos al sofrito de tomate.  Incorporamos el cuscús y el queso feta desmigado. Por último, probamos de sal por si necesita alguna corrección y añadimos la hierbabuena fresca picada muy finita (la cantidad dependerá del gusto de cada uno).  Dejamos enfriar el cuscús y rellenamos los tomates ... y listo!!!  Si se prefiere, se pueden meter unos minutillos en el horno y servirlos calentitos.


Preparation


Slice the top of the tomatoes, scoop out the pulp and keep it in a bowl.  Prepare the couscous: the same amount of water with chicken stock as the volume of the couscous.  When boiling, remove from the heat and pour the couscous.  Cover and let rest for about 10 minutes until the water is absorbed. 

Once the couscous is ready, sauté the pulp of tomatoes.  Grind the pistachios with the garlic and mix to the fried tomatoes.  Add the couscous and the crumbled feta cheese.  Salt and sprinkle with freshly cut mint as you like it.  Let cool the couscous, stuff the tomatoes ... and ready to serve!!!  If you'd rather have the tomatoes hot you may warm them in the oven for a few minutes.

Helado de cerezas / Cherry ice cream



En esta ocasión, Altea de  Las Cosas del Solete comparte una deliciosa receta de helado de cerezas.  ¡Menuda pinta tan rica!  

Today Altea from Las Cosas del Solete shares a delicious recipe for cherry ice cream.  What a mouthwatering shot!

Ingredientes

300 gr de cerezas deshuesadas

80 gr de azúcar

300 ml de leche 

500 ml de agua

1 sobre de gelatina neutra


Ingredients
300 g pitted cherries
80 g sugar
300 ml milk
500 ml water
1 neutral gelatine

Preparación
Deshuesamos las cerezas y las troceamos. Echamos unos 250 g en un cazo con el azúcar y lo calentamos a fuego lento hasta que se deshaga el azúcar y las cerezas suelten el juguito. Lo retiramos del fuego y lo batimos todo junto con la leche. Lo apartamos y dejamos que enfríe un poco. 

Mientras, preparamos la gelatina. Para ello, reservamos una taza de agua y el resto la calentamos hasta que hierva. En la taza que hemos reservado, disolvemos el sobre de gelatina. Cuando el resto de agua hierva, le añadimos el agua donde hemos disuelto la gelatina y la dejamos enfriar unos minutos.

En el recipiente donde vayamos a preparar nuestro helado, troceamos el resto de las cerezas hasta que el fondo quede cubierto. Vertemos la gelatina, asegurándonos que todas las cerezas quedan cubiertas. Metemos el recipiente en la nevera hasta que la gelatina se solidifique. Cuando la gelatina ya no esté líquida, vertemos el batido de cerezas que habíamos hecho al principio hasta llenar el recipiente, y lo metemos en el congelador. Esperamos 2-3 horas y listo!

Otra opción es hacerlo con nata en vez de leche. ¡No es tan light, pero queda mucho más cremoso!


Preparation
De-stone the cherries and halve them.  Mix 250 g of cherries with sugar in a saucepan. Cook in slow heat until the sugar is dissolved and the cherries loose some juice.  Take away from the heat, whip with the milk and let it cool.  

Meanwhile prepare the gelatine.  Reserve one cup of water for it and bring the rest to boil.  Dissolve the gelatine in the cup of water and add it to the boiling water. Let it cool a few minutes.

Cut the rest of cherries and cover the bottom of the container of the ice cream with them.  Pour the gelatine on top of the cherries until they are completely covered.  Keep the container in the fridge and let the gelatine harden.  Pour the mixture of cherries on top of the solid gelatine and keep in the freezer. Wait 2-3 hours and ready it is!

Instead of using milk you may use cream to get a very creamy soft ice cream!

Pastel de pollo con espárragos / Cold chicken & asparagus cake

Para compensar un poco la hamburguesa del mes pasado, se ha decidido por un plato algo más ligero pero igual de sabroso. 

As she wanted to compensate the burger of the last recipe, she decided to share a light yet delicious recipe. 

Un plato estupendo para estos días de calorcito que ya se van acercando ;) Ideal para llevarlo en el tupper para las comidas en la oficina o los picnics de fin de semana. Aquí tenéis este súper pastel frío de pollo con espárragos para que podáis disfrutarlo! 

It is a great meal for the sunny days that are lying ahead. An ideal one for your tupper meals at work or for having a picnic with during the weekend. Enjoy this cold chicken & asparagus cake: here follows the recipe!

Ingredientes:
1 kg de pechuga de pollo
4 huevos
1 cebolla
un chorrito de leche o nata para cocinar
1 cucharada de postre de mostaza inglesa
100 ml de tomate frito
1 manojo de espárragos
sal y pimienta


Ingredients:
1 kg chicken's breast
4 eggs
1 onion
a little bit of milk or sour cream
1 small spoon of English mustard
100 ml of fried tomato sauce
1 bunch of asparagus
salt and pepper

Preparación:


1. Picamos la pechuga de pollo junto con la cebolla hasta que quede todo muy picadito.
2. Añadimos los huevos y mezclamos bien.
3. Incorporamos la leche o la nata, la mostaza y el tomate, y volvemos a mezclarlo todo.
4. Salpimentamos al gusto y reservamos la "pasta" de pollo.
5. Troceamos los espárragos y los escaldamos ligeramente. Luego, cortamos la cocción introduciéndolos en agua fría.
6. Cubrimos el molde donde vayamos a hacer el pastel con unas gotitas de aceite y pan rallado para evitar que se pegue y sea más fácil desmoldarlo después.
7. Vamos rellenando el molde intercalando la masa de pollo con los trozos de espárragos.
8. Lo cocemos en el horno al baño maría durante una hora aproximadamente a 200ºC. 

Dejamos enfriar y ... a comer!!! :D

Preparation:
1. Cut the chicken's breast and the onion in very small pieces.
2. Add the eggs and stir it.
3. Add the milk or the sour cream, the mustard and the tomato sauce, and stir it again.
4. Add salt and pepper to taste and keep the chicken 'pasta' covered.
5. Cut the asparagus and scald it a little bit. Then, make it stop cooking by putting it in cold water.
6. Cover the mold with some drops of oil and some breadcrumbs. This will prevent the cake from sticking and helps us to unmold it.
7. Add the chicken and the asparagus making layers.
8. Cook it in the bain marie for about one hour at 200ºC.

Keep it in a cold place and ... enjoy it!!! :D

Hamburguesa a la italiana / Italian style hamburger



¿Qué sería una hamburguesa sin "su queso"? Y si la respuesta viene de Las Cosas del Solete sería NADA! Porque le encanta el queso, y uno de sus favoritos (por supuesto) la Mozzarella.

Prepárate para esta maravillosa "Hamburguesa a la italiana", sólo necesitas:

Ingredientes:
Panecillo para hamburguesa
Hamburguesa (pollo, ternera, cerdo, vegetariana..., la que más te guste, pero nos recomienda prepararla con carne de buey picada con un poco de mostaza y un toque de guindillas)
Queso mozzarella fresco
Tomate en rodajas
Berros

Preparación:
1. Calentar un poco el panecillo en la plancha para que quede crujiente
2. Cocer la hamburguesa en la plancha
3. Colocar la hamburguesa recién hecha sobre el panecillo y encima la mozzarella, para que se derrita un poco con el calor de la carne.
4. Encima poner un poco de tomate y un puñadito de berros.

Are you ready to enjoy this fabulous 'Italian style hamburger'? You only need:

Ingredients:
Hamburger buns/bread
Hamburger (chicken meat, beef meat, pork meat, vegetarian ... whatever you prefer, but she recommends mincemeat of ox with a little bit of mustard and a touch of red chili)
Fresh mozzarella
Sliced tomato(es)
Watercress

Preparation:
1. Grill the bread until it is crunchy
2. Grill the hamburger
3. Put the hamburger on the bread and the mozzarella on top, so that it melts
4. Finally, put the tomato slices and the watercress on top of it.
