Pastel de pollo con espárragos / Cold chicken & asparagus cake

Para compensar un poco la hamburguesa del mes pasado, se ha decidido por un plato algo más ligero pero igual de sabroso. 

As she wanted to compensate the burger of the last recipe, she decided to share a light yet delicious recipe. 

Un plato estupendo para estos días de calorcito que ya se van acercando ;) Ideal para llevarlo en el tupper para las comidas en la oficina o los picnics de fin de semana. Aquí tenéis este súper pastel frío de pollo con espárragos para que podáis disfrutarlo! 

It is a great meal for the sunny days that are lying ahead. An ideal one for your tupper meals at work or for having a picnic with during the weekend. Enjoy this cold chicken & asparagus cake: here follows the recipe!

Ingredientes:
1 kg de pechuga de pollo
4 huevos
1 cebolla
un chorrito de leche o nata para cocinar
1 cucharada de postre de mostaza inglesa
100 ml de tomate frito
1 manojo de espárragos
sal y pimienta


Ingredients:
1 kg chicken's breast
4 eggs
1 onion
a little bit of milk or sour cream
1 small spoon of English mustard
100 ml of fried tomato sauce
1 bunch of asparagus
salt and pepper

Preparación:


1. Picamos la pechuga de pollo junto con la cebolla hasta que quede todo muy picadito.
2. Añadimos los huevos y mezclamos bien.
3. Incorporamos la leche o la nata, la mostaza y el tomate, y volvemos a mezclarlo todo.
4. Salpimentamos al gusto y reservamos la "pasta" de pollo.
5. Troceamos los espárragos y los escaldamos ligeramente. Luego, cortamos la cocción introduciéndolos en agua fría.
6. Cubrimos el molde donde vayamos a hacer el pastel con unas gotitas de aceite y pan rallado para evitar que se pegue y sea más fácil desmoldarlo después.
7. Vamos rellenando el molde intercalando la masa de pollo con los trozos de espárragos.
8. Lo cocemos en el horno al baño maría durante una hora aproximadamente a 200ºC. 

Dejamos enfriar y ... a comer!!! :D

Preparation:
1. Cut the chicken's breast and the onion in very small pieces.
2. Add the eggs and stir it.
3. Add the milk or the sour cream, the mustard and the tomato sauce, and stir it again.
4. Add salt and pepper to taste and keep the chicken 'pasta' covered.
5. Cut the asparagus and scald it a little bit. Then, make it stop cooking by putting it in cold water.
6. Cover the mold with some drops of oil and some breadcrumbs. This will prevent the cake from sticking and helps us to unmold it.
7. Add the chicken and the asparagus making layers.
8. Cook it in the bain marie for about one hour at 200ºC.

Keep it in a cold place and ... enjoy it!!! :D

Crema de espárragos / Asparagus cream



No sabéis lo alegre que me puse cuándo mi tía Auri me escribió diciendo que este mes iba a participar, que tenía una receta deliciosa con espárragos por lo que no se lo iba a perder. Os prometo que si ella lo dice esta es una receta asegurada. Así que aquí tenéis su receta:

You can't imagine how happy I was when I read the post of my aunt Auri telling me she would be part of our blog this month, sharing a recipe. She told me that she has a delicious one with asparagus, so she would participate. I promise you: this recipe guarantees success. So, here it is:

Ingredientes:
 1 manojo de espárragos
 1 cebolla
 1 puerro
 2 cucharadas soperas de aceite de oliva
 agua o caldo de haber cocido otras verduras
 1 pastilla de caldo de verduras (esta la usas si no tienes el caldo)  
 sal

Ingredients:
1 bunch of asparagus
1 onion
1 leek
2 soup spoons of olive oil
water or vegetable stock
1 vegetable stock cube (if you wouldn't have natural vegetable stock)
salt

Preparación:
1. Picamos en trozo menuditos, los espárragos, la cebolla y el puerro.
2. En una cazuela rehogamos la cebolla con dos cucharadas de aceite. Cuando este ponchada le añadimos el puerro, damos unas vueltas y seguidamente añadimos los espárragos. 
3. Ponemos el agua sin que los cubra del todo y añadimos la pastilla de caldo. O solo con el caldo de verduras.
4. Dejamos que se hagan muy lentamente, cuando estén tiernos, les sacamos un poco de agua y los trituramos con la batidora. Si queremos que estén más ligeros les añadimos más agua de la que les  hemos  sacado. Probamos y si hace falta le añadimos sal.
5. Llevamos a ebullición y apagamos.

Preparation:
1. Cut the asparagus, the leek and the onion in small pieces.
2. Cook the onion in two spoons of olive oil until it is clear, then add the leek, stirr it a few times and add the asparagus.
3. Add water and the vegetable stock cube or just add the natural vegetable stock.
4. Let it cook slowly, and when it is soft, take some water out and mix it with the blender. If  you'd prefer your soup clearer, just add some more water. Taste it and add salt to taste.
5. Wait until it boils and ready is your soup.

Nota: Para las que no engordáis podéis añadir un chorrito de crema de leche y unos picatostes. Recordad, servir calentita.

Note: If you would like to have it a bit more creamy, you can put a little bit of milk cream and some croutons. Don't forget, it must be served hot.

Rollitos de espárragos / Asparagus rolls


He aprovechado al publicar esta receta para hacer mis primeros "pinitos" aplicando alguna cosita de lo aprendido en el curso Scrapbooking: crea elementos con Photoshop. Este es un curso impartido por la fabulosa Meisi en la escuela de Jackie Rueda. Sólo tengo  palabras bonitas para Meisi, por explicar todas las cositas con unos vídeos tan amenos. Que con una voz suave y dando detalles de todo hace que lo que inicialmente parece complicadísimo se convierta en algo más que fácil.

I want to show you my first food photography photo using some things that I learned this month in the online course Scrapbooking: creating elements with Photoshop. This course is tutored by the fabulous Meisi of the school of Jackie Rueda. I only have nice words for Meisi: she explains everything by using very animated videos. What seems very complex at first sight, gets really easy while she explains it into the deepest detail, with her soft voice.

Ahora al detalle con la receta de este mes. Me encantan los espárragos, ya sean en sopas, cremas o a la plancha, pero en esta ocasión quería ponerle un toque más. Así que aquí tenéis mi transformación de los rollitos vietnamitas!

Now, straight to the point: my recipe of this month. I love asparagus, in soups, creams and even grilled, but for this occasion I wanted do something differently. So, this is my interpretation of Vietnamese rolls!

Ingredientes (para 3 rollitos):
3 obleas de arroz
25g fideos de arroz vermicelli
3 gambas grandes cocidas y peladas
3 puntas de espárragos trigueros
12 brotes de soja germinada
1 lima
3 hojas de cilantro
3 hojas de hierbabuena
una pizca de sal
1cucharada pequeña de vinagre de arroz
1cucharada soperas de salsa de soja
1cucharada pequeña salsa de pescado

Ingredients (for 3 rolls):
3 rice wafers
25g of vermicelli rice noodles
3 cooked and peeled prawns
3 tips of green asparagus
12 germinated soybeans
1 lime
3 leaves of coriander
3 leaves of peppermint
a little bit of salt
1 little spoon of rice vinegar
1 soup spoon of soy sauce
1 little spoon of fish sauce

Preparación:
1. En un cazo con un poco de agua hervir las puntas de los espárragos hasta que estén al dente.
2. En un bowl poner agua hirviendo y poner a remojar los fideos de arroz durante unos cinco minutos.
3. Remojar una oblea de arroz en agua caliente para que se ablande y colocarla encima de un trapo húmedo. Esto es importante para poder enrollar bien los rollitos.
4. Colocar unos cuantos fideos de arroz, una gamba, una punta de espárrago, cuatro brotes de soja, una hoja de hierbabuena, una de cilantro, una pizca de sal y un chorrito de lima. Doblar tres de los bordes de la oblea y enrollar.
5. Preparar la salsa para poder mojar los rollitos: en un bowl pequeño mezclar la salsa de soja, la salsa de pescado, el vinagre de arroz y un chorrito de zumo de lima.

Preparation:
1. Boil the tips of the asparagus in a little bit of water until they are 'al dente'.
2. Put boiled water in a bowl and soak the noodles for about five minutes.
3. Soak one rice wafer in boiling water until it gets soft and put it in a damp cloth. It is important to roll the rolls well.
4. Put some noodles, one prawn, one tip of a green asparagus, four soybeans, one leaf of peppermint, one of coriander, a little bit of salt and a some lime juice on the top. Fold three corners of the wafer and then roll it.
5. Make the dip sauce for the rolls: mix the soy sauce, the fish sauce, the rice vinegar and the lime juice in a little bowl.

Nota: este es un plato que se debe servir caliente. Si no se pueden preparar y comer, es preferible que antes de comer se frían en aceite de girasol o de soja bien caliente.

Note: this is a hot dish. If you can't eat it immediately after preparation, we recommend you to fry it in sunflower or soy oil, just before you eat it.http://meisicursos.com/

Inspírate con ... Espárragos / Inspiration day with ... Asparagus


Entre mi recetas he observado que el sabor dulce del espárrago triguero suele contrastarse con un ingrediente salado.  Por ejemplo, enrollar un manojo de unos pocos espárragos con tiras de salmón.  Sirven también otros pescados ahumados, mojama, jamón serrano o beicon crujiente.

Among my recipes, I have found that the sweet flavour of green asparagus contrasts well with savoury foods. For example, roll strips of salmon around a bunch of a few asparagus stalks. This can also be done with other smoked fish, smoked ham or crispy bacon. 


La mayonesa suele ser el condimento que acompaña los espárragos hervidos. Una forma diferente de tomar espárragos blancos es prepararlos al estilo flamenco.  Se sirven acompañados de un huevo duro y patatas al vapor, todo ello rociado con mantequilla derretida, sal y pimienta.  La mantequilla puede sustituirse por aceite de oliva y también añadir un toque con hierbas (romero, tomillo, cebolleta).


Mayonnaise is the sauce that is usually served with boiled asparagus. A different way of eating white asparagus is to prepare it is Flemish style. This means that it is served with a hardboiled egg and steamed potatoes, drizzled with melted butter and seasoned with salt and pepper.  Instead of butter, olive oil can be used, and a pinch of herbs can be added (rosemary, thyme, spring onions).

Otra forma de tomar espárragos trigueros es al estilo piamontés, una vez hervidos se toman con una salsa, la receta es la siguiente.

Salsa para los espárragos a la piamontesa:

En un cazo al baño María a fuego medio con tres yemas y 40 -50 g de mantequilla a trocitos y media cucharada de agua fría.  Trabaja los ingredientes con cuidado hasta obtener una salsa lisa y homogénea.  A continuación incorpora lentamente un vaso de vino blanco y lleva a ebullición, removiendo continuamente.  Cuando empiece a hervir retira del fuego, vierte en una salsera y deja entibiar
 removiendo lentamente con una cuchara de madera.  Verter la salsa sobre los espárragos y servir inmediatamente.


Espárragos a la piamontesa / Asparagus in Piamontes style 

Another way to eat green asparagus is Piamontes Style: when boiled, the asparagus is eaten with a nice sauce. Here is the recipe:

Piamontes Sauce for asparagus:


In a saucepan on a medium heat, prepare with bain-marie:

Three egg yolks and 40 or 50 grams of diced butter with half a teaspoon of cold water.

Work the ingredients together carefully until you have a smooth sauce.

Add a glass of white wine slowly, and bring to the boíl, stirring continually.

Espárragos trigueros / Green asparagus


Los espárragos, esta planta con numerosas especies nativas en Europa, Ásia y África. Usada en algunos momentos de nuestra historia como planta medicinal, y en otras como alimento. Llegó a la Península Ibérica de la mano de los árabes en el año 200 a.c. y dejó de consumirse a finales del siglo XIV.

Durante el siglo XX, gracias a un duro trabajo de agricultores y distribuidores, fue recuperado el cultivo y comercialización de este vegetal. Aunque en la actualidad, el principal productor europeo es Alemania, seguido de Italia.

Y si te gustan mucho los espárragos y quieres saborearlos recién salidos del campo, no puedes perderte la Ruta de los Espárragos por la Baja Sajonia (noroeste de Alemania) o la de Baden (sureste de Alemania). Dónde podrás contemplar su cosecha (de abril a junio) y saborear las deliciosas especialidades de la región preparadas con este estupendo vegetal. Y si vas después de la cosecha (julio-noviembre), no te preocupes. Podrás observar sus plantas verdes con sus características bayas rojas.

Así que te proponemos que revoluciones tu cocina y nos presentes tus platos elaborados con ESPÁRRAGOS trigueros!

Asparagus is a plant with a lot of varieties in Europe, Asia and Africa. During the ages, it has been used for medicinal treatment as well as food. It came to the Iberian Peninsula with the arrival of the Arabs in 200 a.c. and the consumption of it stopped at the end of the XIVth century.

In the XXth century, farmers and dealers have been working hard to recover the cultivation and commercialization of asparagus. However, nowadays, the main European producer is Germany, followed by Italy.

If you really like asparagus and if you want to taste it coming freshly from the fields, you should go to Germany and do the Lower Saxony Asparagus Route (in the North East of the country) or the Baden Route (in the South East). There you can see them crop (April to June) and enjoy the delicious tastes of the region. If you would go before they crop (July to November), don't worry, you'll see the green plants with their characteristic red berries.

So, we want to suggest you to do some revolutionary cooking and show us your dishes with green ASPARAGUS!
