Paté de berenjenas / Aubergine pâté



El emtabal o mutabal es uno de mis platos preferidos de la cocina libanesa.  Existen muchas recetas en la web.  La mía la conseguí de este sitio que os recomiendo por la ilustración de cada paso del proceso. Espero que os guste este paté de berenjenas.

This is one of my favourite Lebanese dishes called “emtabal” or “mutabal”.  There are several recipes on the web, I got mine from this website which I recommend because of all the photos for every stage.  I hope you will enjoy this aubergine pâté. 

Ingredientes

2 berenjenas grandes
1 diente de ajo
1 cucharada de aceite de oliva
2 cucharadas de zumo de limón
1/2 cucharadita de comino molido
60 gramos de semillas de sésamo (para preparar el tahini*)
Pimentón
Sal y pimienta

Ingredients

2 large aubergines
1 clove of garlic
1 spoonful of olive oil
2 spoonfuls of lemon juice
½ teaspoon of ground cumin
60 g of sesame seeds (to prepare the tahini*)
Paprika
Salt and pepper

Preparación

Cortar las berenjenas por la mitad a lo largo y con cuidado de no perforar la piel se hacen unos cortes profundos en la carne.  Colocar las berenjenas sobre una bandeja engrasada con la piel arriba.  Asarlas durante 25 minutos en un horno precalentado a 200º C. Dejar enfriar, pelar, eliminar las semillas y extraer la pulpa.

Para elaborar el tahini se tuesta ligeramente el sésamo en una sartén sin aceite removiendo frecuentemente.  Retirar del fuego cuando las semillas tomen color y desprenden su aroma.  Triturar poco a poco las semillas en un mortero añadiendo un poco de agua hasta conseguir una textura cremosa.

En la batidora añadir la pulpa de las berenjenas el aceite, el tahini, el comino, el ajo y el zumo de limón.  Triturar hasta lograr una pasta fina, añadir sal y pimienta.

Servir en un plato con un poco de pimentón y de aceite de oliva.  Degustar sobre tostadas o pan de pita.  

Preparation

Cut the aubergines in half lengthwise and make deep cuts with a sharp knife without piercing the skin.  Put the aubergines on a greased tray with the skin side on top.  Roast the aubergines in a 200º C preheated oven for 25 minutes.  Let them cool, peel them and take away the seeds.  Take the flesh off the aubergines.

To prepare the tahini toast slightly the sesame seed in a non-greased frying pan and stirring them frequently. Remove when brown and when they have a nice aroma.  Put the grilled seeds in a mortar or in a deep container.  Grind them slowly, adding a trickle of water until you obtain a creamy texture.

Put the aubergines pulp in a blend and add the olive oil, the garlic, the tahini, the ground cumin and the lemon juice.  Blend until you obtain a thin paste, and add salt and pepper.  Serve on toast or pita bread.

Inspírate con ... cerezas / Inspiration day with cherries




Esta delicia ya puede verse desde hace algunos días en las fruterías.  Son una de mis frutas favoritas, de hecho, creo que fue el primer ingrediente que me inspiró de niña.  Recuerdo la cara de sorpresa de mi madre cuando me sorprendió con las manos en la masa.  Había terminado de mezclar todos los ingredientes de un bizcocho y se me ocurrió añadir aquellas cerezas tan rojas.  Mi madre me ayudó a terminar el pastel y colocarlo en el horno. “¿Sabes cómo se llama el pastel que acabas de hacer? Un clafoutis (pastel de cerezas en francés) ”. Luego me explicó que lo único que faltaba para ser perfecto era quitarles los huesos.  Aparte de este pequeño fallo, aquel pastel me supo buenísimo.


This delicious fruit has been in the shops for a few days now. It is one of my favourite fruits, in fact, I think it was the first food that inspired me. I remember my mother´s surprised face when she caught me cooking with it. I had already mixed the ingredients for a sponge cake when it occured to me to add some red cherries. My mother helped me finish the cake and put it in the oven.
“Do you know what this sort of cake is called? A clafoutis (French for cherry cake).” She explained that the only thing missing to make it perfect was to take out the stones. Apart from this small defect, the cake was delicious. 


Años más tarde en Bélgica, probé una interesante mezcla: un pastel de carne picada con una salsa de cereza. Desgraciadamente no recuerdo el nombre de la receta flamenca pero es sin duda una de las mejores cosas que he comido. 


Years later, in Belgium, I tried the combination of a cherry sauce with a minced meat cake. Unfortunately, I can´t remember the name of this Flemish dish, but it was, without doubt, one of the best things that I have ever eaten. 

Así que esta entrada del blog se inspira básicamente de mis experiencias con las cerezas.  La última grata sorpresa que me llevé fue en un restaurante de Francia donde de postre pedí una copa amaretto.  Se me ocurrió preguntar qué llevaba y creo que fue allí mi primer flechazo culinario.  Con tan solo unas bolas de helado de vainilla, unas picotas en aguardiente y unas almendras laminadas ligeramente tostadas, el chef había conseguido recrear a la perfección el sabor de este licor de almendras italiano.   


So this entry in the blog is inspired basically by my experiences related to cherries. The last pleasant surprise that I received was in a restaurant in France, where I asked for a dessert called amaretto cup. I asked what it was made of, and I think it was the first time I fell in love with food. Just with vanilla ice-cream, a few cherries in licqueur and some slightly grilled split almonds, the chef had managed to recreate perfectly this Italian licqueur made of almonds. 

Lo más molesto a la hora de cocinar las cerezas ya sea para un pastel, una salsa o una mermelada es deshacerse de los huesos.  Existen varios utensilios más o menos complejos y de precios diferentes en la web.  Sin embargo, he encontrado un deshuesador bastante económico porque usa la tecnología del “hazlo tú mismo”.  (Fuente: denikatessen).  Añado también este es el vídeo de Hands on gourmet para ver concretamente como funciona este deshuesador.


The most annoying thing when cooking with cherries for a cake, a sauce or jam, is taking out the stones. Various utensils are available on the web for this, more or less complicated, and at different prices. Nevertheless, I have found a de-stoner which is economical, because it uses the technique of 'do it yourself' (source: denikatessen).

Sopa fría de fresas con hierbabuena / Cold strawberry mint soup



En esta ocasión traigo una receta de una de mis fotógrafas preferidas: Hélène Dujardin.  Tiene un blog de cocina muy conocido con unas recetas y unas fotos preciosas: tartelette

The recipe of this month is from one of my favourite photographers: Hélène Dujardin.  Her well-known food blog has the most astonishing recipes and beautiful pictures: tartelette


Ingredientes

300 g fresas
90 ml agua
50 g azúcar
2 cucharas soperas de hierbabuena troceada

Ingredients

300 g strawberries
90 ml water
50 g sugar
2 tablespoons chopped fresh mint

 Preparación

En una cazuelita mezclar el azúcar y la hierbabuena en el azúcar, cocer a fuego lento.  Hervir durante un minuto aproximadamente hasta que el azúcar se disuelva del todo.  Apartar del fuego y dejar enfriar para que continúe la infusión de hierbabuena.  Quitar el rabillo de las fresas y partirlas por la mitad.  Ponerlas en una batidora o picadora.  Cuando el jarabe de hierbabuena se haya enfriado, picar las fresas añadiendo una cuchara sopera de jarabe a la vez.  Servir en chupitos cuando la mezcla esté lisa.



Preparation

Combine the sugar, water and mint in a small saucepan and bring them to a simmer.  Cook for a minute until the sugar is dissolved.  Remove from the heat and let cool: this will allow the mint to infuse the syrup. Remove the hulls from the strawberries and halve them.  Place the strawberries in a blender.  When the mint syrup is cooled, blend the strawberries adding the syrup, one tablespoon at the time.  Serve in shot glasses when the mixture is smooth.

Inspírate con ... Espárragos / Inspiration day with ... Asparagus


Entre mi recetas he observado que el sabor dulce del espárrago triguero suele contrastarse con un ingrediente salado.  Por ejemplo, enrollar un manojo de unos pocos espárragos con tiras de salmón.  Sirven también otros pescados ahumados, mojama, jamón serrano o beicon crujiente.

Among my recipes, I have found that the sweet flavour of green asparagus contrasts well with savoury foods. For example, roll strips of salmon around a bunch of a few asparagus stalks. This can also be done with other smoked fish, smoked ham or crispy bacon. 


La mayonesa suele ser el condimento que acompaña los espárragos hervidos. Una forma diferente de tomar espárragos blancos es prepararlos al estilo flamenco.  Se sirven acompañados de un huevo duro y patatas al vapor, todo ello rociado con mantequilla derretida, sal y pimienta.  La mantequilla puede sustituirse por aceite de oliva y también añadir un toque con hierbas (romero, tomillo, cebolleta).


Mayonnaise is the sauce that is usually served with boiled asparagus. A different way of eating white asparagus is to prepare it is Flemish style. This means that it is served with a hardboiled egg and steamed potatoes, drizzled with melted butter and seasoned with salt and pepper.  Instead of butter, olive oil can be used, and a pinch of herbs can be added (rosemary, thyme, spring onions).

Otra forma de tomar espárragos trigueros es al estilo piamontés, una vez hervidos se toman con una salsa, la receta es la siguiente.

Salsa para los espárragos a la piamontesa:

En un cazo al baño María a fuego medio con tres yemas y 40 -50 g de mantequilla a trocitos y media cucharada de agua fría.  Trabaja los ingredientes con cuidado hasta obtener una salsa lisa y homogénea.  A continuación incorpora lentamente un vaso de vino blanco y lleva a ebullición, removiendo continuamente.  Cuando empiece a hervir retira del fuego, vierte en una salsera y deja entibiar
 removiendo lentamente con una cuchara de madera.  Verter la salsa sobre los espárragos y servir inmediatamente.


Espárragos a la piamontesa / Asparagus in Piamontes style 

Another way to eat green asparagus is Piamontes Style: when boiled, the asparagus is eaten with a nice sauce. Here is the recipe:

Piamontes Sauce for asparagus:


In a saucepan on a medium heat, prepare with bain-marie:

Three egg yolks and 40 or 50 grams of diced butter with half a teaspoon of cold water.

Work the ingredients together carefully until you have a smooth sauce.

Add a glass of white wine slowly, and bring to the boíl, stirring continually.

Espárragos: utensilios para facilitar la tarea / Utensils to prepare asparagus the easy way


Entre los diferentes espárragos, el triguero es el que más aprecio por su textura y sabor.  Hay menos que pelar y son tiernos, lo que permite más tipos de cocción: al vapor, rehogados o simplemente a la plancha.

There are different kinds of asparagus, but the green asparagus is the most popular one, due to its texture and flavour. There is less to peel, and it is tender, which allows different cooking methods: steamed, fried until golden, or cooked on a hotplate.



En la web encontré tres utensilios específicos para los espárragos a la hora de facilitar la  preparación.  
On the Internet I found three utensils specifically designed to make the preparation of asparagus easy.

Un pelador de espárragos, existen diferentes modelos con precios variados. 
A peeling knife, many models are available with different prices.

La esparraguera, se trata de un cazo hondo con una cesta para mantener los espárragos en pie con la yema en la parte más alta.  Favorece la cocción de la base y mantiene la punta intacta.  Un recipiente para cocer pasta también puede servir, solo hay que cortar la base de los espárragos a la misma longitud y sujetarlos con un cordón para conseguir más estabilidad. 


The asparagus cooker, a deep saucepan with a basket, which keeps the asparagus upright with the head at the top. It helps the stalks to cook, and maintains the head intact. A pan for cooking pasta can be used; cut the asparagus stalks to the same length and tie them with string so that they remain upright.

Esta fuente de servicio con escurridera al fondo permite que los espárragos sigan perdiendo las últimas gotas de cocción. 

This serving dish with a drainer underneath allows the asparagus to drain well.

Profiteroles de tomate mozzarella con coulis de pesto / Tomatoes and mozzarella cheese profiterole with pesto coulis






Esta receta de mi libro de tapas es una versión divertidísima del clásico tomate con mozzarella.


Ingredientes



Mozzarella de búfala en esferas pequeñas

Tomates cereza (la misma cantidad de esferas de mozzarella)

6 cucharas soperas de aceite de oliva

4 cucharas soperas de agua caliente

Zumo de medio limón

1 manojo de albahaca fresca

1 pizca de pimienta de Cayena

Sal



Preparación

Cortar la tapa de los tomates y vaciarlos con una cucharadita con cuidado de no perforar la piel.  Salar el interior de los tomates, volcarlos sobre papel absorbente para que vaya perdiendo humedad mientras se prepara el coulis.

Deshojar el manojo de albahaca.  Reservar algunas hojas para decorar.  Mezclar las restantes con las 4 cucharadas de agua caliente, salpimentar.  Añadir el aceite de oliva y el zumo de limón, mezclar hasta obtener el coulis.

Insertar las esferas de mozzarella en los tomates, colocarlos en un plato y cubrir con el coulis y guardar al fresco.  Decorar con hojas de albahaca en el momento de servir.

This recipe from my tapas recipe book is an amusing version of tomatoes with mozzarella.

Ingredients



Mozzarella buffalo cheese in small rounds

Cherry tomatoes (the same number as the mozzarella rounds)

6 soup spoons of olive oil

6 soup spoons of hot water

Juice of half a lemon

1 bunch of fresh basil

1 pinch of cayenne pepper

Salt



Preparation



Cut off the tops of the tomatoes and take out the inside, being careful not to pierce the skin.  Salt the insides and turn the tomatoes upside down on a absorber paper so that they dry out while you are preparing the coulis.


Pull the leaves off basil.  Keep some leaves for decorating later.  Mix the rest of the leaves of basil with the 4 soup spoons of hot water, the salt and the pepper.  Add the olive oil and the lemon juice, mixing until the coulis is ready. 

Insert the rounds of mozzarella into the tomatoes, put them on a plate, cover with the coulis and put in cool place.  Decorate with basil leaves before serving.
