Cerezas al vino / Cherries in wine


Esta vez os traigo la versión de una receta bastante fácil que me pareció muy interesante por las especies que usa.  

My recipe is a version of an easy one, especially interesting because of the spices.   



Ingredientes


350 g de cerezas deshuesadas

200 ml de vino tinto afrutado
200 g de azúcar
la corteza en tiras de una naranja pequeña
2 anís estrellados

Ingredients


350 g de-stoned cherries 

200 ml fruity red wine
200 g sugar
the rind of a small orange cut in thin strips
2 star anise


Preparación


Mezclar el vino, el azúcar, las tiras de la corteza de naranja y el anís estrellado en una cazuela.  Dejar que se disuelva completamente el azúcar a fuego lento. Llevar a ebullición, añadir entonces las cerezas.  Reducir a fuego lento unos cinco minutos, remover de vez en cuando hasta que se reblandezcan las cerezas.  Apartar del fuego y dejar enfriar del todo.  Retirar las tiras de corteza y el anís estrellado.  Mantener en el frigorífico al menos dos horas antes de servir.



Preparation


Mix the wine, sugar, orange rind and star anise in a saucepan and place it over low heat.  Cook the mixture until the sugar is fully dissolved.  Bring to a boil and add the cherries.  Reduce to a simmer for about five minutes, stir occasionally until the cherries get tender. Remove from the heat and let it cool completely.  Then take out the rind and the star anise.  Keep in the fridge at least two hours before serving.

Tarta de queso suave con coulis de cerezas / Cherry cheescake


Esta es una de esas recetas en la que tomas un poco de aquí, otro poco de allí y sale un pastel estupendo que inmediatamente queda registrado en tu recetario de por vida.

This is one of those typical recipes: you use a little bit of this and a little bit of that and in the end you have a delicious cake. The recipe will be written in your personal recipe book and will live forever.

El caso es que tan solo tenía una terrina de queso de untar en casa. Estuve buscando un rato por la red porque todas las recetas de cheescake que había leído y probado traían bastantes más, normalmente tres. Así que decidí poner imaginación y técnica ;) 

In this particular case, I only had one pack of cream cheese. I searched on the web because in all the recipes that I had found before you need more cheese, in most of them three packs. That's why I decided to use my imagination and technique ;)

Lo tenía claro, quería un pastel esponjoso y grueso pero sin perder el sabor a queso. Así que decidí dar volumen batiendo bien la clara por un lado y mezclarla sin perder el volumen con el resto de la masa.

I had a clear idea: I wanted a spongy and thick cake but I didn't want to loose the cheesy taste. So, I gave it volume by whipping well the egg-white on the one hand and to mix it slowly with the rest of the dough on the other hand.

Mi catador oficial y amante de cheesecakes, o sea mi esposito, le dio veredicto favorable. Así que aquí os presento mi pastel de queso suave con cerezas que deseo os guste tanto cómo a los míos.

My official test person and lover of cheesecakes -my husband- gave it a favorable verdict. So, I present you this cherry cheesecake. I hope you'll enjoy it as much as my family does.

Ingredientes
Ingredients

Para la masa del fondo:
150g galletas tipo maria
75g mantequilla derretida

For the bottom dough:
150g of soft cookies
75g melted butter

Para la masa de queso:
1 tarrina de queso de untar (aproximadamente 200g)
1 huevo
55g azúcar
45cc nata para montar o crema de leche
30g harina
1 cucharadita de vainilla
1 pizca de sal

For the cheese mass:
1 pack of cream cheese (approximately 200g)
1 egg
55g of sugar
45cc cream
30g flour
1 teaspoon of vanilla
a little bit of salt

Para el coulis de cerezas:
150g de cerezas
2 cucharadas soperas de azúcar
medio limón pequeño
2 cucharadas soperas de ron blanco (opcional)

For the cherry coulis:
150g of cherries
2 tablespoons of sugar
half of a little lemon
2 tablespoons of white rum (optional)

Preparación:
1. Separar la clara de la yema del huevo en dos bowls. En el bowl de la yema, añadir el queso, el azúcar, la nata y la vainilla y mezclar bien.
2. Añadir la harina tamizada y seguir mezclando.
3. Montar las claras a punto de nieve con una pizca de sal.
4. Mezclar de forma envolvente las claras batidas con la masa de queso.
5. Poner las galletas en un trapo de cocina y golpearlas bien hasta que queden trituradas.
6. Mezclar la mantequilla derretida con las galletas.
7. Enharinar un molde redondo y forrar la base con la masa de galletas. Colocar la masa de queso y huevo encima y hornear a 170ºC durante unos 60 minutos.
8. Deshuesar las cerezas y ponerlas a cocer en un cazo a fuego medio junto al azúcar, el zumo de limón y la cascara del limón.
9. Dejar cocer hasta reducir un poco el líquido y luego triturar. Pasar por un colador chino para que quede fino. Si quieres que se vean algunas enteras, deja un puñado de cerezas para cocer al final.
10. Añadir el ron y dejar reducir hasta conseguir la textura deseada.
11. Una vez el pastel esté cocido dejar enfriar a temperatura ambiente una media hora y reservar en el frigorífico durante unas 3 horas.
12. Antes de servir calentar un poco el coulis, colocarlo encima del pastel y listo!

Preparation:
1. Separate the white from the yellow of the egg in two bowls. In the yellow bowl, add the cheese, sugar, cream and vanilla and mix well.
2. Add the sifted flour and continue mixing.
3. Beat the egg whites until stiff with a little bit of salt.
4. Mix the egg whites with the cheese mass in a surrounding form.
5. Put the biscuits in a tea towel and beat them well until they are crushed.
6. Mix melted butter with crushed crackers.
7. Flour a round cake pan and line the base with cookie dough. Place dough, cheese and egg on top and bake at 170 ° C for about 60 minutes.
8. De-stone the cherries and bring them to boil in a saucepan over medium heat together with the sugar, lemon juice and lemon rind.
9. Simmer until the liquid reduces slightly and shred. Use a Chinese colander to refine. If you want to see some whole cherries in the cheesecake, leave a handful of them to bake at the end.
10. Add the rum and reduce until you get the desired texture.
11. Once the cake is baked, let it cool at room temperature for half an hour and keep it in the refrigerator for about 3 hours.
12. Before serving, warm the coulis, put it on the cake and voilà, ready!

Helado de cerezas / Cherry ice cream



En esta ocasión, Altea de  Las Cosas del Solete comparte una deliciosa receta de helado de cerezas.  ¡Menuda pinta tan rica!  

Today Altea from Las Cosas del Solete shares a delicious recipe for cherry ice cream.  What a mouthwatering shot!

Ingredientes

300 gr de cerezas deshuesadas

80 gr de azúcar

300 ml de leche 

500 ml de agua

1 sobre de gelatina neutra


Ingredients
300 g pitted cherries
80 g sugar
300 ml milk
500 ml water
1 neutral gelatine

Preparación
Deshuesamos las cerezas y las troceamos. Echamos unos 250 g en un cazo con el azúcar y lo calentamos a fuego lento hasta que se deshaga el azúcar y las cerezas suelten el juguito. Lo retiramos del fuego y lo batimos todo junto con la leche. Lo apartamos y dejamos que enfríe un poco. 

Mientras, preparamos la gelatina. Para ello, reservamos una taza de agua y el resto la calentamos hasta que hierva. En la taza que hemos reservado, disolvemos el sobre de gelatina. Cuando el resto de agua hierva, le añadimos el agua donde hemos disuelto la gelatina y la dejamos enfriar unos minutos.

En el recipiente donde vayamos a preparar nuestro helado, troceamos el resto de las cerezas hasta que el fondo quede cubierto. Vertemos la gelatina, asegurándonos que todas las cerezas quedan cubiertas. Metemos el recipiente en la nevera hasta que la gelatina se solidifique. Cuando la gelatina ya no esté líquida, vertemos el batido de cerezas que habíamos hecho al principio hasta llenar el recipiente, y lo metemos en el congelador. Esperamos 2-3 horas y listo!

Otra opción es hacerlo con nata en vez de leche. ¡No es tan light, pero queda mucho más cremoso!


Preparation
De-stone the cherries and halve them.  Mix 250 g of cherries with sugar in a saucepan. Cook in slow heat until the sugar is dissolved and the cherries loose some juice.  Take away from the heat, whip with the milk and let it cool.  

Meanwhile prepare the gelatine.  Reserve one cup of water for it and bring the rest to boil.  Dissolve the gelatine in the cup of water and add it to the boiling water. Let it cool a few minutes.

Cut the rest of cherries and cover the bottom of the container of the ice cream with them.  Pour the gelatine on top of the cherries until they are completely covered.  Keep the container in the fridge and let the gelatine harden.  Pour the mixture of cherries on top of the solid gelatine and keep in the freezer. Wait 2-3 hours and ready it is!

Instead of using milk you may use cream to get a very creamy soft ice cream!

Pastel de cerezas vegano / Vegan cherry pie

This is a great way to actually use your cherries and prepare this fabulous tart. You can find the Spanish version here and the translation in English below:

Ingredients (for the dough):
1 cup of whole-weat flour
1 tablespoon of brown sugar
1/8 teaspoon of salt
6 tablespoons of margarine
4 tablespoons of very cold water 

Ingredients for the filling:
500g cherries (more or less)
2 tablespoons of margarine
1/2 cup of brown sugar

Preparation:
1. Mix the flour, sugar and salt in a bowl. Add the margarine with a fork and add the water until you get a compact mass.
2. Put the mass in a covered bowl and keep it in the fridge.
3. Wash the cherries and de-stone them. Put them in a bowl and add the sugar and the margarine. Let it rest while finishing the preparation of the dough..
4. Put the mass on a baking tray covered with a greaseproof paper and stretch it. Put the cherries in the middle and 'close' the edges to keep the fruit together.
5. Sprinkle the edges with some brown sugar and bake it in the oven at 180ºC for about 40 minutes.

Clafoutis de cereza / Cherry clafoutis

El clafoutis es una tarta de origen francés dónde se colocan las cerezas en un molde y se bañan de una masa parecida a la de la crêpe. La versión original se prepara con las cerezas enteras, para dar más sabor. Aunque en la búsqueda de lo práctico a la hora de comer la mayoría de tartas que se preparan actualmente son con cerezas deshuesadas. Es una tarta muy versátil que permite prepararla con otras frutas. ¡Inventa! 


The clafoutis is a French tart, prepared with cherries suspended in a pancake-like batter. The original version is made from whole cherries for extra flavour. Because of the search for a practical lunch, most cakes are prepared with pitted cherries. It is a very versatile cake that you can prepare with other fruits. Be inventive!

You can find the original Spanish version of this delightful recipe on I love bugs, but we translated the recipe for you:

Ingredients:
150g sugar
150g flour
3 eggs
30g butter
500cc whole milk
the zest of one lemon
a little bit of salt
200g cherries (pitted)

Preparation:
1. Preheat the oven to 180ºC.
2. Put the milk in a saucepan with the lemon zest and heat it without allowing to boil.
3. Mix the flour, sugar and salt in a bowl. Add the eggs and mix well. Then add the milk and mix  again.
4. Grease a round baking dish and put the cherries in it. Put the dough in the spaces between  the cherries. Put some dough upon it and 'rearrange' the cherries.
5. Bake for about 45 minutes until lightly browned.

Inspírate con ... cerezas / Inspiration day with cherries




Esta delicia ya puede verse desde hace algunos días en las fruterías.  Son una de mis frutas favoritas, de hecho, creo que fue el primer ingrediente que me inspiró de niña.  Recuerdo la cara de sorpresa de mi madre cuando me sorprendió con las manos en la masa.  Había terminado de mezclar todos los ingredientes de un bizcocho y se me ocurrió añadir aquellas cerezas tan rojas.  Mi madre me ayudó a terminar el pastel y colocarlo en el horno. “¿Sabes cómo se llama el pastel que acabas de hacer? Un clafoutis (pastel de cerezas en francés) ”. Luego me explicó que lo único que faltaba para ser perfecto era quitarles los huesos.  Aparte de este pequeño fallo, aquel pastel me supo buenísimo.


This delicious fruit has been in the shops for a few days now. It is one of my favourite fruits, in fact, I think it was the first food that inspired me. I remember my mother´s surprised face when she caught me cooking with it. I had already mixed the ingredients for a sponge cake when it occured to me to add some red cherries. My mother helped me finish the cake and put it in the oven.
“Do you know what this sort of cake is called? A clafoutis (French for cherry cake).” She explained that the only thing missing to make it perfect was to take out the stones. Apart from this small defect, the cake was delicious. 


Años más tarde en Bélgica, probé una interesante mezcla: un pastel de carne picada con una salsa de cereza. Desgraciadamente no recuerdo el nombre de la receta flamenca pero es sin duda una de las mejores cosas que he comido. 


Years later, in Belgium, I tried the combination of a cherry sauce with a minced meat cake. Unfortunately, I can´t remember the name of this Flemish dish, but it was, without doubt, one of the best things that I have ever eaten. 

Así que esta entrada del blog se inspira básicamente de mis experiencias con las cerezas.  La última grata sorpresa que me llevé fue en un restaurante de Francia donde de postre pedí una copa amaretto.  Se me ocurrió preguntar qué llevaba y creo que fue allí mi primer flechazo culinario.  Con tan solo unas bolas de helado de vainilla, unas picotas en aguardiente y unas almendras laminadas ligeramente tostadas, el chef había conseguido recrear a la perfección el sabor de este licor de almendras italiano.   


So this entry in the blog is inspired basically by my experiences related to cherries. The last pleasant surprise that I received was in a restaurant in France, where I asked for a dessert called amaretto cup. I asked what it was made of, and I think it was the first time I fell in love with food. Just with vanilla ice-cream, a few cherries in licqueur and some slightly grilled split almonds, the chef had managed to recreate perfectly this Italian licqueur made of almonds. 

Lo más molesto a la hora de cocinar las cerezas ya sea para un pastel, una salsa o una mermelada es deshacerse de los huesos.  Existen varios utensilios más o menos complejos y de precios diferentes en la web.  Sin embargo, he encontrado un deshuesador bastante económico porque usa la tecnología del “hazlo tú mismo”.  (Fuente: denikatessen).  Añado también este es el vídeo de Hands on gourmet para ver concretamente como funciona este deshuesador.


The most annoying thing when cooking with cherries for a cake, a sauce or jam, is taking out the stones. Various utensils are available on the web for this, more or less complicated, and at different prices. Nevertheless, I have found a de-stoner which is economical, because it uses the technique of 'do it yourself' (source: denikatessen).

Cerezas / Cherries


Hay utensilios que quedan perfectos para ciertos ingredientes. Hace ya unos meses compré este tazón y servilleta (entre otras cositas) en Verde Mandarina, una tienda que me tiene el corazón robado. Así que hice algunas fotos con estos accesorios, ambos de GreenGate, para presentaros el ingrediente de este mes: CEREZAS.

There are some props that match perfectly with certain ingredients. A few months ago, I bought a bowl and a napkin (among other things) in Verde Mandarina, a shop that stole my heart.I made some photos with these accessories, both from Green Gate, to show you the ingredient of this month: CHERRIES.

Seguro que cuándo entres a Verde Mandarina te va a pasar lo mismo que a mí. Te enamoraras al instante de mil y una cosas bonitas. Pero no olvides preguntar a Bárbara, la propretaria, cuáles son los talleres que están entran preparando. Porque tienen un espacio en el que realizan un montón de talleres para todas las edades, grupos y donde se organizan eventos. Ahora están preparando uno chulísimo, de fotografía culinaria, con Los Tragaldabas y  Luísa Morón. ¡Yo ya estoy intentando cuadrar fechas para poder asistir!

I know when you'd be in Verde Mandarina you'd be feeling like me. You'd fall in with a lot of pretty things. Don't forget to ask Bárbara, the shop owner, about the next workshop. They have a room where they offer plenty of workshops for different ages and groups and where they organize events as well. Actually, they are preparing a nice food photography course with Los Tragaldabas and Luísa Morón. I'm checking my agenda and hope to find the time to participate!

Regresando a lo que iba... este mes os proponemos una fruta ideal para esta temporada, tanto para comer solas cómo de acompañamiento de algunos platos de carne o postres.

Where were we?  This month we present you a seasonal fruit, that you can eat pure or in a dish: e.g. together with meat or for dessert.

El origen de las cerezas se sitúa en el Mar Negro y el Mar Caspio pero su cultivo se fue extendiendo con rapidez a casi toda Europa y Asia. Se cree que esto fue debido a que las aves migratorias transportaron sus semillas. En la actualidad, se cultivan mayoritariamente en EEUU, Rusia, Francia, Alemania, Italia y España.

Cherries originally come from the Black Sea and the Caspian Sea but soon they were cultivated almost everywhere in Europe and Asia. Probably, migratory birds carried the seeds. Nowadays, this fruit is basically cultivated in the USA, Russia, France, Germany, Italy and Spain.

A nivel nutricional, las cerezas destacan por su contenido en flavonoides y polifenoles (antioxidantes), además de ser una fuente importante de fibra. 

In terms of nutrition, cherries are a great source of flavonoids and polyphenols (antioxidants), and an important source of fiber.
