Ensalada de tomate y mozarella / Tomato and mozzarella salad


Un mes más, Paula de I love bugs ha querido estar con nosotras. Con un tomate, un poquito de mozzarella y un toque de orégano ha preparado una refrescante ensalada veraniega.

Tarta de queso suave con coulis de cerezas / Cherry cheescake


Esta es una de esas recetas en la que tomas un poco de aquí, otro poco de allí y sale un pastel estupendo que inmediatamente queda registrado en tu recetario de por vida.

This is one of those typical recipes: you use a little bit of this and a little bit of that and in the end you have a delicious cake. The recipe will be written in your personal recipe book and will live forever.

El caso es que tan solo tenía una terrina de queso de untar en casa. Estuve buscando un rato por la red porque todas las recetas de cheescake que había leído y probado traían bastantes más, normalmente tres. Así que decidí poner imaginación y técnica ;) 

In this particular case, I only had one pack of cream cheese. I searched on the web because in all the recipes that I had found before you need more cheese, in most of them three packs. That's why I decided to use my imagination and technique ;)

Lo tenía claro, quería un pastel esponjoso y grueso pero sin perder el sabor a queso. Así que decidí dar volumen batiendo bien la clara por un lado y mezclarla sin perder el volumen con el resto de la masa.

I had a clear idea: I wanted a spongy and thick cake but I didn't want to loose the cheesy taste. So, I gave it volume by whipping well the egg-white on the one hand and to mix it slowly with the rest of the dough on the other hand.

Mi catador oficial y amante de cheesecakes, o sea mi esposito, le dio veredicto favorable. Así que aquí os presento mi pastel de queso suave con cerezas que deseo os guste tanto cómo a los míos.

My official test person and lover of cheesecakes -my husband- gave it a favorable verdict. So, I present you this cherry cheesecake. I hope you'll enjoy it as much as my family does.

Ingredientes
Ingredients

Para la masa del fondo:
150g galletas tipo maria
75g mantequilla derretida

For the bottom dough:
150g of soft cookies
75g melted butter

Para la masa de queso:
1 tarrina de queso de untar (aproximadamente 200g)
1 huevo
55g azúcar
45cc nata para montar o crema de leche
30g harina
1 cucharadita de vainilla
1 pizca de sal

For the cheese mass:
1 pack of cream cheese (approximately 200g)
1 egg
55g of sugar
45cc cream
30g flour
1 teaspoon of vanilla
a little bit of salt

Para el coulis de cerezas:
150g de cerezas
2 cucharadas soperas de azúcar
medio limón pequeño
2 cucharadas soperas de ron blanco (opcional)

For the cherry coulis:
150g of cherries
2 tablespoons of sugar
half of a little lemon
2 tablespoons of white rum (optional)

Preparación:
1. Separar la clara de la yema del huevo en dos bowls. En el bowl de la yema, añadir el queso, el azúcar, la nata y la vainilla y mezclar bien.
2. Añadir la harina tamizada y seguir mezclando.
3. Montar las claras a punto de nieve con una pizca de sal.
4. Mezclar de forma envolvente las claras batidas con la masa de queso.
5. Poner las galletas en un trapo de cocina y golpearlas bien hasta que queden trituradas.
6. Mezclar la mantequilla derretida con las galletas.
7. Enharinar un molde redondo y forrar la base con la masa de galletas. Colocar la masa de queso y huevo encima y hornear a 170ºC durante unos 60 minutos.
8. Deshuesar las cerezas y ponerlas a cocer en un cazo a fuego medio junto al azúcar, el zumo de limón y la cascara del limón.
9. Dejar cocer hasta reducir un poco el líquido y luego triturar. Pasar por un colador chino para que quede fino. Si quieres que se vean algunas enteras, deja un puñado de cerezas para cocer al final.
10. Añadir el ron y dejar reducir hasta conseguir la textura deseada.
11. Una vez el pastel esté cocido dejar enfriar a temperatura ambiente una media hora y reservar en el frigorífico durante unas 3 horas.
12. Antes de servir calentar un poco el coulis, colocarlo encima del pastel y listo!

Preparation:

5. Put the biscuits in a tea towel and beat them well until they are crushed.
6. Mix melted butter with crushed crackers.
7. Flour a round cake pan and line the base with cookie dough. Place dough, cheese and egg on top and bake at 170 ° C for about 60 minutes.
8. De-stone the cherries and bring them to boil in a saucepan over medium heat together with the sugar, lemon juice and lemon rind.
9. Simmer until the liquid reduces slightly and shred. Use a Chinese colander to refine. If you want to see some whole cherries in the cheesecake, leave a handful of them to bake at the end.
10. Add the rum and reduce until you get the desired texture.
11. Once the cake is baked, let it cool at room temperature for half an hour and keep it in the refrigerator for about 3 hours.
12. Before serving, warm the coulis, put it on the cake and voilà, ready!

Hamburguesa a la italiana / Italian style hamburger



¿Qué sería una hamburguesa sin "su queso"? Y si la respuesta viene de Las Cosas del Solete sería NADA! Porque le encanta el queso, y uno de sus favoritos (por supuesto) la Mozzarella.

Prepárate para esta maravillosa "Hamburguesa a la italiana", sólo necesitas:

Ingredientes:
Panecillo para hamburguesa
Hamburguesa (pollo, ternera, cerdo, vegetariana..., la que más te guste, pero nos recomienda prepararla con carne de buey picada con un poco de mostaza y un toque de guindillas)
Queso mozzarella fresco
Tomate en rodajas
Berros

Preparación:
1. Calentar un poco el panecillo en la plancha para que quede crujiente
2. Cocer la hamburguesa en la plancha
3. Colocar la hamburguesa recién hecha sobre el panecillo y encima la mozzarella, para que se derrita un poco con el calor de la carne.
4. Encima poner un poco de tomate y un puñadito de berros.

Are you ready to enjoy this fabulous 'Italian style hamburger'? You only need:

Ingredients:
Hamburger buns/bread
Hamburger (chicken meat, beef meat, pork meat, vegetarian ... whatever you prefer, but she recommends mincemeat of ox with a little bit of mustard and a touch of red chili)
Fresh mozzarella
Sliced tomato(es)
Watercress

Preparation:
1. Grill the bread until it is crunchy
2. Grill the hamburger
3. Put the hamburger on the bread and the mozzarella on top, so that it melts
4. Finally, put the tomato slices and the watercress on top of it.

Mini mozzarellas rellenas / Stuffed mini mozzarella



Me encantan las ensaladas de tomate, albahaca fresca, mozzarella, una pizquita de sal y un chorrito del delicioso aceite de oliva virgen extra. 

Así que un día, mientras preparaba mis propias mini mozzarellas para mis ensaladas con la receta de The Urban cheese craft, decidí preparar mis ensalada versión rápida.

Tanto sirve para una ensalada rápida, cómo para una guarnición estupenda y curiosa que dejará a tus comensales con la boca abierta cuándo muerdan esa mozzarella rellena. Y así puedes hacer todas tus versiones, con aceitunas negras, anchoas ...

Y si no elaboras tu propio queso, compra mozzarella fresca y rellénala de tus ingredientes favoritos. Aunque, obviamente, si preparas tu propia mozzarella tendrás un producto fresquísimo, delicioso y con infinidad de posibilidades. 

Aquí te dejo mi versión preparada con el kit para mozzarella de The Urban Cheese Craft, ya que viene completo con los ingredientes (ácido cítrico + cuajo + sal para queso) y material necesario (termómetro). Y en 20 minutos tienes tu propia mozzarella fresca. Pero si quieres, puedes encontrar muchas más versiones en la red, aunque la mayoría requiere más tiempo.

Ingredientes:
leche fresca
Kit Mozzarella The Urban Cheese Craft
tomates cherries
hojas de albahaca fresca
aceite de oliva virgen extra
sal

Preparación:
1. Con un cuchillo de puntilla introduce las hojas de albahaca en el interior del tomate sin cortarlo por la mitad.
2. En un bowl aliña los tomates rellenos con aceite de oliva virgen extra y un poquito de sal.
3. Prepara la mozzarella y en el momento de darle forma, cubre cada tomate con la masa de queso, haciendo bolitas pequeñas.
4. Deja enfriar unos minutos y saborea esta rica mozzarella rellena.

If you don't prepare your own cheese, buy fresh mozzarella and fill it with your favourite ingredients. Of course, if you make your own cheese, it will be a fresh and delicious one with plenty of possibilities.

Here, I show you my version prepared with The Urban Cheese Craft Mozzarella's kit, because it contains all you need: the ingredients (citric acid + rennet tablets + cheese salt) and the material needed (thermometer). In only 20 minutes your mozzarella can be ready. If you want, you can find a lot more versions on the internet. However, for most recipes, you'll need more time.

Ingredients:
fresh milk
The Urban Cheese Craft Mozzarella's kit
cherry tomatoes
fresh basil leaves
extra virgin olive oil
salt

Preparation:
1. Use a knife to put the basil leaves into the cherry tomato without cutting it in half.
2. Season the filled tomatoes in a bowl, with olive oil and salt.
3. Make the mozzarella by using the recipe and at the moment you need to shape it, cover every tomato with the cheese mass making small balls.
4. Allow to cool and enjoy these mini stuffed mozzarellas.

Mozzarella


Imposible olvidar el recuerdo de esa textura blanda, sabor suave y delicado, y el aspecto blanco y terso del inconfundible QUESO MOZZARELLA. Así que si todavía no lo has probado esta es  tu ocasión! Y para los amantes de este queso, os lo dedicamos y esperamos con entusiasmo llenéis el blog con vuestras recetas!

El nombre de Mozzarella deriva del verbo "mozzare" (cortar, en italiano), ya que se da forma con los dedos, cortando la cuajada mientras pasa entre los dedos índice y pulgar. Este es un tipo de queso no madurado, elaborado a partir del proceso denominado "pasta filata".

Los primeros datos escritos de su producción datan del siglo XII. Cuando los monjes de la región de Capua (cerca de Nápoles), en el sur de Italia, lo fabricaban a partir de leche de búfala. Actualmente, se sigue fabricando con este tipo de leche pero también a partir de leche de vaca o mezcla de vaca y oveja.
