What would a hamburger be without cheese? According to Las Cosas del Solete: "NOTHING!". Because she loves cheese, and (of course) because one of her favourite cheeses is mozzarella.

Are you ready to enjoy this fabulous 'Italian style hamburger'? You only need:

Ingredients:
Hamburger buns/bread
Hamburger (chicken meat, beef meat, pork meat, vegetarian ... whatever you prefer, but she recommends mincemeat of ox with a little bit of mustard and a touch of red chili)
Fresh mozzarella
Sliced tomato(es)
Watercress

Preparation:
1. Grill the bread until it is crunchy
2. Grill the hamburger
3. Put the hamburger on the bread and the mozzarella on top, so that it melts
4. Finally, put the tomato slices and the watercress on top of it.

Mini mozzarellas rellenas / Stuffed mini mozzarella

Ingredientes:
leche fresca
Kit Mozzarella The Urban Cheese Craft
tomates cherries
hojas de albahaca fresca
aceite de oliva virgen extra
sal

Preparación:
4. Deja enfriar unos minutos y saborea esta rica mozzarella rellena.

I love salads with tomato, basil, mozzarella, a pinch of salt and a drop of extra virgin olive oil.

That's why one day, when I was preparing my own mini mozzarellas for my salads with The Urban Cheese Craft Mozzarella's recipe, I decided to create my own version.

You can use it as a quick salad recipe or as a delicious and special side salad. I'm sure your dinner companions will be grateful for its splendid taste. You can make your own versions with dark olives, anchovies ...

If you don't prepare your own cheese, buy fresh mozzarella and fill it with your favourite ingredients. Of course, if you make your own cheese, it will be a fresh and delicious one with plenty of possibilities.

Here, I show you my version prepared with The Urban Cheese Craft Mozzarella's kit, because it contains all you need: the ingredients (citric acid + rennet tablets + cheese salt) and the material needed (thermometer). In only 20 minutes your mozzarella can be ready. If you want, you can find a lot more versions on the internet. However, for most recipes, you'll need more time.

Ingredients:
fresh milk
The Urban Cheese Craft Mozzarella's kit
cherry tomatoes
fresh basil leaves
extra virgin olive oil
salt

Preparation:
1. Use a knife to put the basil leaves into the cherry tomato without cutting it in half.
2. Season the filled tomatoes in a bowl, with olive oil and salt.
3. Make the mozzarella by using the recipe and at the moment you need to shape it, cover every tomato with the cheese mass making small balls.
4. Allow to cool and enjoy these mini stuffed mozzarellas.

This recipe from my tapas recipe book is an amusing version of tomatoes with mozzarella.

Ingredients

Mozzarella buffalo cheese in small rounds

Cherry tomatoes (the same number as the mozzarella rounds)

6 soup spoons of olive oil

6 soup spoons of hot water

Juice of half a lemon

1 bunch of fresh basil

1 pinch of cayenne pepper

Salt

Preparation

Cut off the tops of the tomatoes and take out the inside, being careful not to pierce the skin.  Salt the insides and turn the tomatoes upside down on a absorber paper so that they dry out while you are preparing the coulis.

Pull the leaves off basil.  Keep some leaves for decorating later.  Mix the rest of the leaves of basil with the 4 soup spoons of hot water, the salt and the pepper.  Add the olive oil and the lemon juice, mixing until the coulis is ready.

Insert the rounds of mozzarella into the tomatoes, put them on a plate, cover with the coulis and put in cool place.  Decorate with basil leaves before serving.

Mozzarella

It is impossible to forget that soft texture, mild and smooth taste and the white aspect of the delicious mozzarella cheese. So, if you haven't tasted it yet, this is your chance! And for lovers of this cheese: this month is dedicated to mozzarella and we like to see the blog filled with your recipes!

The name of mozzarella is derived from the verb 'mozzare' (cut off, in italian), because one used his/her fingers (index and thrum) to cut the curd. This is a type of unripened cheese made by a process called 'pasta filata'.

The first written proof of mozzarella production dates from the twelfth century.  By that time, the monks of the region of Capua (near Naples), in Southern Italy, manufactured it from buffalo milk. Currently, it is still made with this type of milk, but also from cow's milk or a mix of cow and sheep milks.

We adore mozzarella cheese. And, what is your favourite sort of cheese?

If you choose mozzarella, send us a photo and a recipe for which you need mozzarella, before 29th march, or post it on your blog and send us the link on blogcocinaglobal@gmail.com.
