The recipe of this month is from one of my favourite photographers: Hélène Dujardin.  Her well-known food blog has the most astonishing recipes and beautiful pictures: tartelette

Ingredientes

300 g fresas
90 ml agua
50 g azúcar
2 cucharas soperas de hierbabuena troceada

Ingredients

300 g strawberries
90 ml water
50 g sugar

Preparation

Combine the sugar, water and mint in a small saucepan and bring them to a simmer.  Cook for a minute until the sugar is dissolved.  Remove from the heat and let cool: this will allow the mint to infuse the syrup. Remove the hulls from the strawberries and halve them.  Place the strawberries in a blender.  When the mint syrup is cooled, blend the strawberries adding the syrup, one tablespoon at the time.  Serve in shot glasses when the mixture is smooth.

Fresas con chocolate y coco / Strawberries with chocolate and coconut

On the I love bugs blog you can find a lot of recipes, decoration tips and crafts ideas. There is no chance you'll get bored!

We met Paula in a photography course on style by Silvia Palma, in Jackie's Rueda school. When I saw Paula's photos on Instagram, especially one about recycling strawberry wooden boxes, I thought: what would she have done with the strawberries?

Of course, she made a fabulous recipe. Well honestly, tons of recipes! Paula shared a lot of these recipes with strawberries on her blog. We had a look at every single one of them and decided to share the one for strawberry cake with you.

Ingredients:
300g flour
150g butter cut in cubes
150g sugar
1 egg
1 soup spoon of water
a little bit of salt
icing sugar
300g fresh strawberries cut in little cubes
50g strawberry's jam

Preparation:
First we make the dough. Create the shape of a volcano with the flour and put the sugar, egg, water, salt and butter in it. Add the flour slowly and mix everything to make the dough. Let it rest for ten minutes and preheat the oven at 200ºC.

Roll out the dough to get it thin. Cut it in two parts: one for the base and the other for the top.

Spread some butter throughout the mold and put the dough into it, also on the sides. Put a thin layer of strawberry jam, cover it with the fresh strawberries and cover this layer with the other layer of the dough. Cut the rest of the dough.

Bake it  for 30 minutes until it is golden brown. Sprinkle the cake with icing sugar and serve it warm.

Ichigo Daifuku

Last month, I bought a ton of fresh tofu + another of fried tofu. As I had prepared a lot with this ingredient (tofu) and really had enough of it, I hadn't more ideas. That's why I decided to search on the internet for a recipe that a friend recommended me. That's how I found the Con dos palillos blog.

I made some of the dishes presented there and they were all delicious. Besides, you can find some fantastic explanations for starters. I recommend to have a look at the ingredient section: if you would love to know more about Japanese cooking, this blog gives a great introduction into this world.

When I saw the recipe for Ichigo Diafuku (small Japanese strawberry cake), I decided that I had to invite her on our blog this month. As I know for sure your dinner guests will really enjoy this recipe, it was fantastic that she accepted the invitation. Ichigo Diafuku is a typical Japanese sweet made with rice paste, filled with paste of sweet beans and strawberries. It really is a delight to the senses.

Thanks to the beautiful simplicity and the combination of the flavours, this cake is the ideal one to have together with your afternoon tea.

Inspírate con fresas / Inspiration day with strawberries

Today we have the help of a professional chef to give us some great tips about the ingredient of this month.  I encourage you to read this post!

Could you please introduce yourself to our readers and to the followers of our blog Cocina Global ?

Hello. My name is Manel Gomez, and I was the chef at the Hotel Restaurant Sant Ferriol in the province of Girona. I have now retired, but I still love cooking.

In the recipes that I have consulted, strawberries are generally prepared as a puree, in syrup and raw, but they are almost never cooked, except for making jam. Why are they prepared this way, and almost never cooked?

The problem with cooking strawberries is that they are so soft that with very little heat they become soft and lose their texture, in contrast with other fruits that stand heat better (apples, pears, apricots, etc.). Therefore, when we cook strawberries, we reduce them to a puree or a liquid.

Strawberries are only used in desserts, ice-creams and cakes.

Could you use them in other dishes, for example, like you use apples, pomegranates or raisins in salads?

Strawberries are ideal for salads. They can be accompanied by citric fruits or tropical fruits such as oranges, mangoes, pineapples, etc. If they are used in a salad as the only fruit, you can add parmesan cheese, creating an agreeable contrast of flavours. You can also use them to make a salad dressing: crushed, strained and mixed with a classical vinegarette dressing.

Which type of foods can be combined with strawberries?

Strawberries can be combined well with classical cream. They can also be combined very well with milk or yogurt, custard, chocolate and sugar; in general, with any sweet or acid food. In the latter case, only if we want to increase the acidity of the dish.

I have observed an evolution in the way of eating strawberries. Before, jellies were used together with whipped cream, and the most unusual thing that happened was the arrival of chocolate fondue, which changed the way of eating strawberries.  What are the tendencies today in restaurant kitchens when presenting strawberries?

You could say that things haven´t changed much in most restaurants. If things have changed, then it's mostly in the presentation that has become more modern: people look for volume in dishes, accompanied by ice-cream … Essentially, classical recipies are adapted to modern presentation. As for innovation, we can emphasize that in haute cuisine, dishes are made with dehydrated strawberries, and they are hydrated again with liquid (you can use, for example, milk, liquid cream or chocolate). One suggestion, if you don´t mind the taste of alcohol, is to use muscatel (half reduced and half not reduced).

Voy a intentar sintetizar.

What advice and ideas could you suggest to the followers of our blog Cocina Global, to experiment with strawberries in their recipes (contrast of flavours, textures, etc.)?

The question is very open, so I can´t answer without expanding the theme. I will try to be concise.

One advice is not to take off the stalks of the stawberries until the last minute, because that makes them lose flavour.

One idea: if you have taken off the stalks, and you keep the stawberries in the fridge, for example until the next day, you can increase their aroma and flavour by adding a few drops of lemon juice.

For the most daring: you can also use strawberries squashed, sieved, and mixed with a demi-glace sauce as a dressing for red meat. You can also eat them on their own with a mixture of liquid caramel and Modena vinegar (use the latter in moderation). With petit four canapes, bathed with warm chocolate and left to dry.

Within the new culinary techniques, emulsions are used to give different textures to foods.

Here is an easy recipe for faux strawberry mayonnaise:

- 150 gr. concentrated strawberry pulp
- 150 gr. virgin olive oil
- 1.5 gr. soya sauce emulsion
- 3 gr. Gelespessa or Gelcrem thickener.

Blend all the ingredients with a Turmix blender, until you have a thick sauce.  Leave in the fridge for two hours: then it will be ready to serve.

Thank you very much for your answers and your help!

You´re welcome. It has been a pleasure to work together with you.
