Crema de calabaza con virutas de jamón serrano / Pumpkin soup with prosciutto shavings



La foto de Marta nos hace querer meter la mano por la tela y agarrar ese plato! ¿Qué podría ser mejor para estas noches frías que una crema de calabaza caliente con el sabor de virutas de jamón serrano? Nada, de verdad! Gracias, Marta!

Ingredientes (2-3 personas):
500g de calabaza
2 patatas medianas
Un puerro no muy grande
1 zanahoria grande
3 porciones de quesitos cremosos (tipo Caserío)
Canela, sal y pimienta
Virutas de jamón serrano o 1 loncha de jamón serrano
*en caso de no encontrar jamón, 2 rebanadas de pan

Preparación:
1. Pelar y limpiar todas las hortalizas y poner a hervir en agua con sal (deben quedar cubiertas de agua (pero depende de cómo os guste la textura final, si más líquida o más pastosa).
2. Cuando la zanahoria o patata se puedan cortar fácilmente con un cuchillo, le añadís una pizquita de canela (muy poca) y pimienta (poquita!). Dejáis hervir unos 5 minutos más y retiráis del fuego.
3. Añadís los 3 quesitos y trituráis todo.
4. Cortáis el jamón a tiritas y lo freís en aceite bien caliente, sólo unas vueltas en la paella y retiráis.
Et voilà! Ya podéis servir la crema con virutas por encima a modo de decoración.
*Otra opción si no encontráis jamón es hacerlo con pan, cogéis una rebanada grande de pan y lo cortáis a cuadritos, luego lo freís en la paella con aceite.

Una receta muy fácil, económica, con muchas vitaminas y muy sabrosa :)

Looking at Marta's photo makes us want to reach in and grab that plate! What could be best for these cold nights than a warm pumpkin soup with the added flavour of prosciutto shavings? Not much, indeed! Thank you, Marta!

Ingredients (2-3 people):
500g de calabaza
2 medium potatoes
1 small leek
1 large carrot
3 portions of creamy cheese (e.g. Laughing Cow cheese)
Cinnamon, salt and pepper
Shavings of parma ham or prosciutto

Preparation:

1. Peel and wash all the vegetables and boil in water with salt (the water should cover the vegetables, but the exact quantity depends on whether you like a liquid or thicker soup).

2. When you can easily chop the carrot and potatoes with a knife, add a little bit of cinnamon (just a little!) and pepper (very little!). Let it boil for 5 minutes and remove from the hob.
3. Add the three laughing cow cheeses and mash with a blender.
4. Chop the Parma ham or prosciutto in small strips and fry it in very hot olive oil; just a few turns and you're done.
And voilà! You can serve your soup with the Parma ham shavings on top as decoration.

Ñoquis de calabaza / Pumpkin gnocchi


¿Veis quién hace una carrera de fondo para llegar? Así viene corre y corre Altea de Las Cosas del Solete para poder participar de nuevo con el ingrediente de este mes. Y nosotros encantadas animando para que llegara a tiempo :)

Y además con una receta que tiene una pinta estupenda. Todo a punto para poner las manos en la masa según indicaciones de Altea:

Para los ñoquis:

Ingredientes:
500 grs calabaza
250 grs harina
1 huevo
sal, pimienta, nuez moscada (al gusto)
Queso parmesano rallado (cantidad al gusto)

Preparación:
1. Cortar la calabaza a cuadraditos no muy gruesos y asarla al horno en vez de cocerla, para que no absorba agua, ya que para hacer los ñoquis cuanta menos agua tengan mejor! Sabemos que la calabaza está en su punto cuando se pueda machacar sin problemas con el tenedor. 
2. Una vez cocida, hacer un puré chafándola con el tenedor. No queremos que quede excesivamente suave, sino que sea más bien una pasta. Y dejamos enfríar un poco, para poder amasarla luego con las manos sin abrasarnos los dedos!! :D 
3. Cuando ya tiene una temperatura manejable, añadir la sal, la pimienta, la nuez moscada, el queso rallado y el huevo. Mezclarlo todo bien y empezar a añadir la harina para preparar la masa. Un consejo: no es necesario amasar como si fuéramos a hacer masa para hacer pasta fresca, ya que si hacemos eso notaréis que vais a necesitar mucha más harina de la estrictamente necesaria y los ñoquis pueden quedar demasiado pesados... Simplemente hay que ir mezclando la masa con la harina hasta que podáis hacer una bola con ella y que sea medianamente manejable.
4. Cuando consigáis este punto, simplemente hay que empezar a hacer churritos (como jugando con plastilina!) y cortar cuadraditos de 1 cm aprox... Y ya tenéis vuestros ñoquis!!!!!! Podéis dejarlos así, o darles la forma característica de los ñoquis con un tenedor o con una "ñoquitera" (no se si de verdad se llama así, pero es que me hace mucha gracia el nombre!), que no es más que una tablita con rayitas y que te ayuda a darles forma.
5. Ponerlos en una olla con abundante agua hirviendo, y un chorrito de aceite. Nada más echarlos los ñoquis se irán directamente al fondo de la olla, dadle un pequeño meneo para que no se peguen y luego esperad a que ellos solitos empiecen a flotar, y LISTOS!! Los vais sacando de la olla y mi recomendación es que los vayáis poniendo en una bandeja con un poco de aceite porque si los amontonáis en un plato probablemente se peguen...

Nota: Todo este rollo que os he soltado y que puede parecer un poco complicado es faciliiiiiiiiiiisimooooooo!!!!!! En internet hay mil vídeos y tutoriales paso a paso mucho mejor explicados lo se... la escritura nunca fue lo mío :(

Para la salsa: (no pongo cantidades muy exactas porque fue un poco invención del momento :D )

Ingredientes:
Queso crema (unos 125 grs)
Un chorrin de leche
3 ó 4 ajos
10 ó 12 champiñones
Harina
Sal y pimienta (al gusto)

Preparación:
1. Sofreír el ajito con los champiñones cortados en láminas. 
2. Cuando están doraditos añadimos un poquitín de harina para darle luego un poco de cuerpo a la salsa, el queso crema y el chorrito de leche, y por supuesto la sal y la pimienta que querías! 
3. Remover hasta que quede todo ligadito y listo para añadir los ñoquis! 
4. Disfrutar!!

Nota: Para darle un último toquecito a la salsa yo le añadí también un poquito de perejil recién cortadito y un toque de tomate seco picado, pero eso ya a gusto del consumidor!

Get ready, set, go… with Altea's instructions.

For the gnocchi:

Ingredients:
500 g pumpkin
250 g flour
1 egg
salt, pepper and nutmeg (to taste)
grated Parmesan cheese (to taste)

Preparation:
1. Chop the pumpkin to medium size cubes and roast it in the oven, so it doesn't absorb any water (for gnocchi, the less water the better!). The pumpkin is ready when you can slice it easily with a fork.
2. Once cooked, mash into with a fork. We don't want the pumpkin to be too soft, instead we're looking for a paste consistency. Let it cool a little bit so we can knead it with our hands with burning our fingers! :D
3. When the pumpkin is at a manageable temperature, add the salt, pepper, nutmeg, grated Parmesan and egg. Mix everything well and add the flour slowly to prepare the dough. Tip: it's not necessary to knead the dough as for fresh pasta as if you do it that you'll need more flour and the gnocchi will be heavier… Simply mix the dough with the flour until you can make a manageable ball from it.
4. When your dough is ready, make long thin strips with is and cut in 1cm cubes… Voilà, you have your gnocchi! You can leave it as is, or shape it into a gnocchi's typical shape, with a fork or with a special tool for it.
5. Put the gnocchi in boiling water with a little bit of olive oil. If left alone, the gnocchi will go straight to the bottom of the pan; give it a little wiggle to prevent sticking and then wait till they start to float by themselves, and they're READY! Remove them from the pan and place them on a tray with a little bit of olive oil as if you pile them all on a plate they'll stick…

Note: All of the above is extremely simple, even if that doesn't sounds like it. You can find several videos on youtube with much better tutorials than my own; writing was never my best subject :(

For the sauce:
(these are not exact amounts as it was a bit of a spur of the moment recipe :D)

Ingredients:
Cream cheese (~125 g)
Milk
3 or 4 garlic
10 or 12 mushrooms
Flour
salt and pepper (to taste)

Preparation:
1. Sauté the garlic with the sliced mushrooms.
2. When the mushrooms are golden, add a little bit of flour (to give it a bit of consistency), the cream cheese and a little bit of milk, and season with salt and pepper to taste.
3. Stir until everything is mixed and ready to add the gnocchi!
4. Enjoy!!!

Note: To add a last touch to the sauce, I added freshly chopped parsley and a chopped dried tomato :)

Crema de calabaza / Pumpkin soup


Estamos en las nubes de tanta participación este mes, especialmente de nuestros amigos de L'Atelier. Dónde construimos una dulce comunidad, por lo que es un placer compartir las recetas de sus miembros. Por primera vez en Cocina Global, os presentamos a Susana Ugarte y su crema de calabaza. Se ve deliciosa y siempre cálidamente reconfortante.

Es fascinante ver diferentes recetas de crema/sopa. Tanto para probar y un invierno tan corto... o no :) 

De parte de Susana:
La calabaza me encanta y en invierno la crema de calabaza es una de mis preferidas. Bien calentita reconforta cuerpo y alma!!!

Hay miles de recetas yo os envio la que suelo hacer normalmente.

Ingredientes:
2 puerros hermosos
500 gr de calabaza pelada
4 zanahorias hermosas

Preparacion:
1. A hago en la olla a presion, pocho los puerros durantes 5 minutos, hasta que esten doraditos y añado la calabaza en trozos y las zanahorias cortadas.
2. Cocer con caldo durante 10 minutos  y triturar hasta tener la textura de una crema.

A la hora de servir la suelo acompañar de picatostes y un poco de crema fresca o queso fresco.

We are over the moon with the huge participation we've been having this month, especially from our friends from L'Atelier. We did build a sweet community there and it's such a pleasure to share their cookings here. For the first time on Cocina Global, we give you Susana Ugarte and her pumpkin soup. It looks yummy and ever so warm.

It's fascinating to see all the different soup recipes. So much to try and such a short winter... or not :)

From Susana to us:
I love pumpkin and in winter, pumpkin soup is one of my favourite soups to have. Nice and hot, pumpkin soup warms body and soul!!!
There are loads of recipes and I'm sending you the one I normally use.

Ingredients:
2 nice leeks
500 g peeled pumpkin
4 carrots

Preparation:
1. In the pressure cooker, cook the leeks for 5 minutes until golden and add the pumpkin in cubes and the chopped carrots
2. Boil in water (or stock) for 10 minutes and mash until you have the desired consistency.

When serving, add croutons and a little bit of cream or fresh cheese.

Mermelada de calabaza 2 / Pumpkin jam 2



Mariana Páscoa se une a nosotras des de Portugal con... una mermelada de calabaza. Es una cosa portuguesa, y os lo digo, es una muy buena cosa! Así que consigan sus calabazas y empiecen a preparar sus propias mermeladas!

Ingredientes:
1,5kg de calabaza cortada en trozos pequeños
900g de azúcar
30g de pectina
1 rama de canela
2 naranjas medianas
150g de nueces

Preparación:
1. Poner la calabaza, el azúcar, la rama de canela y la piel de las naranjas junto con su jugo en una cacerola grande. Dejar reposar durante una hora y remover de vez en cuándo para mezclar el jugo de la calabaza con el azúcar.
2. Poner la cacerola a fuego medio y dejar cocinar durante una hora. Pon 1/3 de la mermelada en un procesador de alimentos junto con la pectina. Dejar reducir hasta que sea un puré fino y añadir la pasta a la cacerola junto con el resto de la calabaza que hemos dejado. Seguir cocinando durante unos 10 minutos. Apartar del fuego y añadir las nueces.
3. Poner la mermelada en botes estaralizados y mantener en un lugar fresco.
4. Provar esta mermelada con un trozo de requesón y será como comerse un pedazo de cielo!

Mariana Páscoa joins us from Portugal with... pumpkin jam. It's a Portuguese thing, I tell you, and a good one! So get your pumpkins ready and get making those jams!

Ingredients:
1,5 kg of pumpkin cut in small pieces
900g of sugar
30g of pectin
1 cinnamon stick
2 medium oranges
150g of nuts

Preparation:

1. Put the pumpkin, the sugar, the cinnamon stick and the zest and juice of the oranges in a large pan. Let it rest for an hour and stir ocasionaly to mix the punmkin juice with the sugar.
2. Put the pan on medium heat an let it boile for an hour. Take 1/3 of the jam to a food processor and the pectin. Reduce to a fine puree and add it to the boiling pan for another 10 minutes. Turn of the heat and add the nuts.
3. Put the jam in sterilized glass jars and let it cool.
4. Try this jam over a nice piece of cottage cheese and you'll be eating a piece of heaven!

Potaje de calabaza / Pumpkin's potage


Cristina nos trae la receta calurosa de este mes, que nos hace mantenernos sentados en la mesa en uno de esos domingos perezosos rodeados de nuestros seres queridos. Es una receta familiar por lo que no la vamos a preparar para comerla solos. ¡Es de esos platos abundantes que te hacen el día feliz!

Ingredientes:
1 kilo de calabaza
300 a 500 g de alubias
2 cebollas grandes
400 g de tomate triturado
2 patatas grandes
300 a 500 g de acelgas
4 clavos
2 a 3 hojas de laurel

Nota: esta es una receta de mi abuela paterna, así que las cantidades son aproximadas. Sirven cualquier tipo de alubias: pintas, rojas, blancas o cualquier variedad local. Este plato sabe mucho mejor cuando se consume los días siguientes a su preparación

Preparación:
1. Poner las alubias en remojo la víspera. 
2. Limpiar y preparar las acelgas. Pelar y cortar en cubos medianos la calabaza y las patatas. 
3. Picar las cebollas para sofreírlas hasta que estén casi caramelizadas, incorporar el tomate triturado hasta que se reduzca un poco. Agregar los cubitos de calabaza y remover bien todo. 
4. Pasados unos cinco minutos de cocción añadir las patatas, dejarlas otros cinco minutos mezclando bien todos los ingredientes con los clavos y las hojas de laurel. 
5. Añadir las alubias y las acelgas. Cubrir todos los ingredientes de agua hasta dejar dos a tres dedos por encima. Cerrar la olla exprés y cocer a fuego intenso una hora.
6. Reducir a fuego lento durante unos quince minutos más.
7. Servir caliente: ¡Buen provecho! 

Nota: aquellos que piensen que se quedarán con hambre con este potaje están equivocados. Este es uno de los platos más consistentes que he probado.

Cristina brings us a hearty recipe this month, one that makes us linger at the table on a lazy Sunday, surrounded by loved ones. It's a family recipe and we can't wait to cook it ourselves. Happy days for hearty dishes!

Ingredients: (4 people)
1 kg pumpkin
2 big onions
2 big potatoes
4 cloves
300 - 500 g beans
400 g finely chopped tomatoes
300 - 500 g chards
2-3 bay leaves

Note: this recipe is from Cristina's Grandmother and as such quantities are not precise. You can use any type of beans: red, white, etc. This dish is even better the day after it's cooked!

Preparation:
1. Leave the beans to soak the night before.
2. Wash and prepare the chards. Peal and cut the pumpkin and potatoes in small cubes.
3. Chop the onions and sauté until almost caramelised. Add the chopped tomatoes until it reduces in volume a little bit. Add the cubes of pumpkin and stir well.
4. Let it cook for about five minutes and add the potatoes. leave for another five minutes, mixing all the ingredients well with the cloves and bay leaves.
5. Add the beans and chards. Cover all with water (3 fingers above the food). Cover the pan and cook in strong heat for about one hour.
6. Reduce the heat to low and cook for another 15 minutes.
7. Serve hot. Enjoy!

Note: If you think you'll be left hungry after this potage, think again! This is one of the most filling dishes Cristina has ever tried :)

Torta y crema de calabaza / Pumpkin tart and soup

Mermelada de calabaza / Pumpkin jam

Pumpkin jam

La mermelada de calabaza es mi favorita. A mi hermano le gusta decirme tonterías cómo "si tuvieras que elegir una para siempre, ¿cuál elegirías?". Tiendo a no tener una respuesta a estas preguntas, pero en este caso sobre mermeladas - la mermelada de calabaza siempre. Con o sin semillas. Con o sin queso al lado. La mermelada de calabaza gobierna mi mundo de las mermeladas!

Ingredientes:
1kg de calabaza en dados
500g de azúcar blanco - a mi no me gusta muy dulce, por lo que esta medida es la adecuada. Puedes incrementar el azúcar a 750g si te gusta más dulce.
3 ramas de canela
2 naranjas
nueces (opcional)

Preparación:
1. Pelar y cortar la calabaza en pequeños cubos hasta obtener 1kg. Y extender en una bandeja.
2. Poner las ramas de canela junto a la calabaza en la bandeja.
3. Cubrir la calabaza con los 500g de azúcar.
4. Pelar y cortar las naranjas a rodajas. Luego, colocarlas encima de la calabaza y el azúcar.
5. Cubrir la bandeja para que no le caiga nada encima (con una tabla de cortar por ejemplo) y dejar reposar unas 12 horas (toda la noche).
6. Una vez ha reposado las 12 horas destapar y se observarán los cubos de calabaza junto con el líquido y las naranjas a rodajas. Eso es lo perfecto!
7. Cuándo estés a punto para preparar la mermelada, empezar primero con los frascos. Lavar los frascos de cristal y las tapas (las mías son metálicas) con agua caliente y jabón, y enjuaguar bien. Colocar todo en el horno, encima de una toalla, a 110ºC. Retirar del horno sólo cuándo esté a punto para llenar los frascos.
8. En la bandeja, dejar sólo dos rodajas de naranja y una de canela, y apartar el resto. Y traspasar el contenido de la bandeja a una cazuela.
9. Llevar al fuego y cocinar a fuego medio, removiendo ocasionalmente hasta que empiece a hervir (tardará unos 20 minutos). Bajar el fuego y remover ocasionalmente hasta que la mezcla se reduzca a la mitad. Y retirar la canela.
10. Traspasar el contenido a los frascos (yo usé tres). Cubrir el frasco con un disco de cera y tapar.

Nota: En uno de los frascos añadí puré de nuez. Trituré las nueces dentro de una bolsa de plástico y con la ayuda de un rodillo de cocina. Cómo llené el resto  con la mermelada de calabaza, mezclé el puré directamente en el mismo frasco, removiendo un poco el contenido para que quedara bien mezclado.

Pumpkin Jam is my favourite jam of all. My brother likes to ask me silly things like “if you had to pick one forever and ever, what would you choose?”. I tend not to have an answer to these questions, but I do in the case of jam – pumpkin jam forever. With or without nuts. With or without cheese on the side. Pumpkin jam rules my jam world!

Ingredients:
1kg of cubed pumpkin
500g of white sugar – I don’t like very sweet jams and this reflects it. You can increase your sugar up to 750g.
3 cinammon sticks
2 oranges
Walnuts (optional)

Preparation:

1.       Peel and chop your pumpkin into small cubes to have 1 kg. Place in a tray.
2.       Put the cinnamon sticks in the tray with the pumpkin.
3.       Cover the pumpkin with 500g of white sugar.
4.       Peel and slice the oranges and place them on top of the pumpkin and sugar.
5.       Cover the tray so nothing falls in it (with a kitchen board for example) and leave to rest for 12 hours (overnight).
6.       When you uncover the tray 12 hours later, you’ll have your pumpkin bits softened in a liquid, with the orange slices on top. You’re good to go!
7.       When you’re ready to make the jam, start off by preparing the jars. Wash glass jars and lids (mine are metallic) in hot soapy water and rinse thoroughly. Place everything in the oven, on top of a kitchen towel, at 110C. Remove from the oven only when you’re ready to bottle the jam.
8.       From the tray with the pumpkin, leave two small orange slices and remove the rest. Leave one cinnamon stick and remove the rest. Transfer everything (cubed pumpkin and liquid) to a pan.
9.       Heat in medium heat stirring occasionally until surface boiling (took 20 minutes). Lower the heat and stir occasionally until you have half the liquid you began with. Remove the cinnamon stick.
10.   Transfer to the prepared jars (I used three jars). Cover the jar mouth with a wax disc and close.
Note: I used mashed up walnut in one of the jars. I put walnuts in a kitchen bag and mashed them with a kitchen roll. As I filled the jar with the jam, I mixed in the walnuts and gave them a little stir for even distribution.

Magdalenas de calabaza / Pumpkin muffins


Hemos recibido una cajita con un lazo precioso de parte de Alba, del blog Mi vida con un vegano. ¿Y sabéis qué había? Unas bellísimas magdalenas de calabaza.

La receta que nos comparte Alba, es una receta del libro "Vegan cupcakes take over the world" de Isa Chandra y Terry Hope. Los ingredientes y la preparacion la podeis encontrar en esta entrada de su blog. Donde ademas hay publicadas muchas mas recetas veganas facilisimas y rapidas de preparar para el dia a dia.

Calabaza / Pumpkin

Calabaza

Empezó el otoño, y con él sus colores naranja-amarillos-rojizos tan espectaculares. Y queríamos que eso se reflejara en los platos de este mes.

Seguro que si os hubiéramos dicho que este ingrediente tiene una gran relación con Halloween inmediatamente hubierais respondido...
CALABAZA

La calabaza, también denominada zapallo, uyama, ayote... en definitiva Cucurbita (para los amigos) es una planta trepadora, de flores amarillas y/o anaranjadas. El fruto es una baya comestible de color verde a naranja intenso y la pulpa tiene un delicado sabor dulce.

En esta época del año forma parte de la gastronomía tradicional de muchas regiones del mundo para festejar diversos eventos. En México, se consume el dulce de calabaza o calabaza en tacha en Día de Muertos. En USA y Canadá se prepara la tarta de calabaza durante el Día de Acción de Gracias. El Reino Unido cuenta con una extensa tradición de tallar linternas a partir de verduras,  por lo que las calabazas son las más usadas para Halloween.

Autumn has started, bringing the beautiful yellow and orange and red tones which make this such an eye candy season. We would like a bit of these colours in this month's recipes and images.

Another clue for this month's ingredient is its connection to Halloween... we're of course thinking of...

PUMPKINS

Pumpkins belong to the genus Cucurbita and are a  gourd-like squash with a few relatives around (like butternut squash).  Typically have a thick, orange or yellow shell which protects a delicately sweet pulp.

Around this time of year, pumpkin is used throughout the world to celebrate different events. In Mexico, it is used in sweet pumpkins (calabaza en tacha) for the 1-2 November (Día de Muertos). In the US and Canada, pumpking pie is a must in Thanksgiving celebrations. In the UK, following a long tradition of carving lanterns from vegetables, pumpkins are commonly used around Halloween.
