Inspírate con tomates / Inspiration day with tomatoes


- Puedo ver perfectamente a mi abuelo recogiendo los tomates de su huerto, ¡solo con este olor!

Este comentario de mi pareja refleja la potencia de los aromas en nuestros recuerdos. A mí, los tomates me llevan a aquellas ensaladas veraniegas tan coloridas y sabrosas de mi infancia. Ahora de adulta puedo consumir tomates durante todo el año, pero parecen haber perdido muchas de sus cualidades. Afortunadamente vivo en una de las regiones hortícolas de España y sé que si espero al verano encontraré buenos tomates. En una reciente charla, un portavoz de La Unió* recordaba la importancia de preservar las variedades de tomates locales. Aquí como consumidores, tenemos un papel importante a la hora de comprar.

This comment from my partner reflects how powerful aromas are for our memories. To me, tomatoes take me back to the colourful and delicious summer salads of my childhood. As an adult, I can buy tomatoes throughout the year, but they seem to have lost some of their quality. Fortunately, I live in a Spanish region where horticulture is important and I usually wait for the summer to get nice and tasty tomatoes. In a recent talk, a spokesman of La Unió* highlighted the importance of preserving local varieties of tomatoes. As consumers, we play an important role when purchasing. 

En cuanto a las ideas para esta entrada me vienen a dos. Ambas me las sugiere el título de una estupenda película: Tomates verdes fritos. Existe en el mercado una amplísima gama de tomates con diferentes colores, formas, sabores y texturas. Con una pieza de dos o tres distintas variedades aderezadas con un buen aceite de oliva virgen se logra una vistosa ensalada multicolor Si queremos algo más consistente, estos tomates se pueden añadir a una masa: una pizza, un pan de sémola o una hogaza por ejemplo. Algo tan mediterráneamente nuestro como el tomate restregado sobre una rodaja de pan, puede tener muchas variantes. Además del jamón serrano, se puede agregar atún, anchoa o mojama por ejemplo.


As for this post, two ideas come to me. Both of them are suggested by the title of a lovely movie: Fried green tomatoes. There is a wide range of tomatoes on the market, with different colours, textures, shapes and tastes. By using two or three varieties of tomatoes dressed with virgin olive oil you can prepare a very pleasant multicoloured salad. If you’d wish something more consistent, you may add the dough of a pizza, a semolina bread or a focaccia. Something as Mediterranean as tomato spread on a bread slice can be modified in many ways. As well as serrano ham, you may put e.g. tuna, anchovy or dried salted fish.

Por supuesto, también recordé la película cuando probé mi primera mermelada de tomates verdes. Fue una grata sorpresa comprobar que además de unas riquísimas salsas este ingrediente tiene muchas posibilidades en su versión dulce. Estoy casí segura ya habréis probado la mermelada de tomate en una ensalada con queso de cabra y o quizá en algún pastel de queso de queso. Si recordamos que el tomate es hortaliza y fruta entonces se amplían las posibilidades gastrómicas ...

Obviously, I also remembered the movie when I first tried green tomato jam. It was a nice suprise to find out that, in addition to very tasty sauces, this ingredient also has much potential in its sweet version. I am quite sure that you have already eaten tomato jam in goat cheese salad or maybe in some cheese cake. Remember that a tomato is not only a vegetable but also a fruit: this may broaden your gastronomic horizon ...

Ensalada tíbia de higos, queso de cabra y tocino / Warm fig, goats cheese and bacon salad


Debo confesar que hasta que no me puse a cocinar esta receta, a mi no me gustaban mucho los higos. Pero desde ese momento, me he convertido en una amante de los higos y ya he preparado esta receta un par de veces... y además he hecho una deliciosa mermelada de higos!

La ensalada de higos calientes, queso de cabra y tocino es muy sencilla y rápida de preparar para cada ocasión, de verdad! Ya lo verás, manos a la obra...

Ingredientes
2 higos por persona
Queso de cabra
Tocino (o panceta o jamón)
Vinagre balsámico
Piñones
Hojas de lechuga (yo utilizé berros, espinacas y rúcula)
Aceite de oliva
Romero seco


Preparación
1. Precalentar el horno a unos 200ºC. Colocar una rebanada de tocino por persona en una bandeja y hornear hasta que quede dorada y crujiente a su gusto (yo la horneé unos 25 minutos)
2. Desmenuzar el queso de cabra junto con el romero seco y aliñar con el vinagre.

3. Cortar la cola de los higos y partirlos a la mitad. Aliñar con el vinagre balsámico una de las mitades. Con la otra hacer un corte y rellenarla de la mezcla de queso preparada anteriormente. En el otro higo hacer un corte en forma de cruz en la base del higo sin terminar de cortarlo y rellenarlo con la mezcla de queso hasta que esté lleno (o al gusto, he usado una cucharita de café para poder rellenarlos bien). Cocer al horno durante unos 20 minutos o hasta que estén cocidos.


4. Poner las hojas de lechuga en bol junto con unos piñones y aliñar con aceite de oliva.
5. Sacar el tocino del horno y cortarlo en trozos pequeños. Añadirlos a la ensalada.
6. Retirar los higos del horno y colocar cuidadosamente encima de la ensalada.
7. Voilá! Ensalada tíbia de higos con queso de cabra y tocino.

Up until the day I cooked this recipe, I was not a fan of figs. From then on, I have become a fig lover and have since prepared this recipe twice more... and made a delicious fig jam as well!

The warm fig and goats cheese and bacon salad is simple and quick to prepare, making it ideal for... every occasion, really! Let's get cracking...

Ingredients
2 Figs per person
Goats cheese
Bacon (or pancetta or prosciutto)
Balsamic vinegar
Pine nuts
Salad leaves (I used watercress, spinach and rocket!)
Olive oil
Dried rosemary

Preparation
1. Turn on the oven at around 200ºC. Place one slice of bacon per person on a tray and put it in the oven. Leave to toast and crisp to your liking (I cooked it for 25 minutes).
2. Crumble the goats cheese with a little bit of dried rosemary and balsamic vinegar to taste.
3. Cut off the top of your figs. Cut one fig in half and drizzle one half with balsamic vinegar; put a small portion of your goats cheese mix on top of the other half. Cut a cross like opening on the top of the remaining fig; hold it gently and squeeze in the rest of your goats cheese mix until it's full (or to taste; I used a tea spoon for this). Put the figs in the oven for 20 minutes or until cooked.
4. Place salad leaves in a bowl and throw a few pine nuts in. Drizzle with a little bit of olive oil.
5. Remove bacon from the oven and cut in small pieces. Add to the salad.
6. Remove figs from oven and place neatly on top of your salad.
7. Voilá! Yummy warm fig salad with goats cheese and bacon.
